How can I tell if the Flying Spaghetti Monster is truly calling to me or if it is all just coincidence?

If it's trully the FSM (praise be unto Him), then you will Know. Everywhere you look you will see your normal, everyday images fade into the beautiful web of Existence, presented in perception's light as Joyous plates of rigatoni, ziti, fettucine, and spaghetti weaving and heaving and caressing tomatoes, mushrooms, and everything else as the Beginning and Ending strands become meaningless and nothing is that is not there. On the other hand, if you have an urge to tithe 10% to the Olive Garden or you think Pizza Hut and Dominos are real pizza, then it's not the noodly appendage but rather the Anti-Pasta, the demon whose gastric insult knows no bounds.

Try wearing a patch over one eye and say 'Arrrg...' repeatedly. If you feel an inner connection you know its true.

You need to use carbon dating... He is, of course, invisible and can pass through normal matter with ease.
