A diamond steel gives you a much better edge with less effort. It does not tear the meat as suggested.

The steel steel re-shapes (very slightly) the edge of the knife. The diamond steel sharpener removes steel to give an edge. Microscopically the difference is that the steel steeled knife edge will tend to cut the meat and the diamond steeled knife will tear the meat (I'm assuming you're cutting steak which is my favorite.). If well done, the steeled knife will have a noticeably smoother cut.

Diamond is the hardest natural element. So presumably it's stronger, less likely to break or dull.
