I ussualy use the smooth side of a meat mallet. I fork it if I'm going to marinade.

I flatten chicken breasts, too.

I there something else I should know?

I beat most pork and beef, except tender cuts.

The only chicken I use a mallet on is the breast, to make it unifor thickness.

Beating is for people who don;t know how to handle a knife. I cut it in half over and over again until I have one long sheet of meat. Then I whack it with the back end of my knife.

Use the pointed side of the meat mallet for tougher/cheaper cuts of meat (flank steak for example) it works wonders - looks a little bit like a waffle. You can then either marinate or slow cook.

Personally, i like to beat my meat with my fists, then i put in on skewers and serve with veggies !! Yummy !!
