Here is a fail proof recipe that I take along with us when we go camping. Not only does it travel well it is one of my favorites and my company always asks that I make it for dessert.
Fruit Cocktail Cake
2 eggs
1 ½ c. sugar
2 c. flour
½ tsp. salt
2 tsp. baking soda
2 c. fruit cocktail, do not drain
½ c. walnuts, chopped (optional)
½ c. brown sugar
Mix eggs, sugar, flour, salt, baking soda and cocktail until just blended. Do not over mix. Pour into a greased oblong baking pan. Sprinkle top with chopped nuts and brown sugar. Bake at 350° for 45 minutes or until done.
Glaze
½ c. sugar
6 tbl. butter
½ c. evaporated milk
½ tsp. vanilla
Boil all of the above ingredients except vanilla for 4 minutes. Remove from heat and allow to cool 5 minutes, then add vanilla. Pour over cake while still warm.

you didnt say if you want to premake the dessert or fix it at the Campsite..here is something you can do both ways
Apple Crisp
Apples, peeled and sliced
3/4 cup butter
3/4 cup dark brown sugar
1 1/4 cup flour
1/2 cup quick oats
1 tablespoon cinnamon
Fill Dutch Oven half way up with apples. Combine brown sugar, flour, oats and cinnamon. Cut butter into mixture. Spread mixture over apples. Cover and cook about 45 minutes or until apples are soft

I am asuming this is for the ride to camp. If not you can still make this for the site but try to keep it cool.
Rice Crispy Bars are always a winner! Try adding some crunchy peanut butter to the mix while it is hot.... and lets not forget the chocolate chips (semi sweet) melted on top like frosting. Sur m' good!
That should make the impression you are looking for.

Rice Krispie Treats? I think they are good anytime, anywhere.
1/4 c Margarine or butter
1 pk 10 oz. mini marshmallows
6 c Rice Krispies
Melt Margarine in large deep pan over low heat. Add marshmallow and stir until completely melted. Remove from heat add Rice Krispies and stir until they are well coated. Using buttered spatula press mixture into buttered pan 13x9x2. Cut when cool.
VARIATION: Stir in 1/4 cup of peanut butter into marshmallow mixture before cereal is added. You could also use colored marshmallows too.

ANGEL SWEETS
1 (12 oz.) pkg. chocolate chips
4 tbsp. butter
2 c. sifted flour
2 eggs
1 c. chopped nuts
4 c. miniature marshmallows
1 pkg. coconut
Melt chocolate and butter. Blend in eggs. Stir in sugar, nuts and marshmallows. Shape in 1 inch balls; roll in coconut. Refrigerate. (Keeps up to two weeks.)
May substitute peanut butterscotch chips for chocolate chips.
GRAM'S FAVORITE CHOCOLATE CHIPPERS
1 1/3 cup shortening, softened
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp. vanilla
3 cups flour
1 tsp. baking soda
1 tsp. salt
1 1/2 cups chocolate chips
1 cups nuts (optional)
Combine shortening, sugars, eggs and vanilla. Mix well. Blend in remaining ingredients.
Drop by teaspoonfuls onto baking sheet.
Bake at 375°F for 8-10 minutes.

Pocket Pies Recipe
This was shown on Food Network by Alton Brown, posting the recipe here for all those who are looking for those pies to take on the road, picnic, or in your lunch box. There are several fillings so will add them in the directions, these can be desserts or lunch pockets. They can be baked, fried, or even deep fried. How versatile can you get? Now add to this that you can make these up and freeze them prior to cooking for OMAC's Ohhhhh yah, now this is one of those really welcome recipes with all around appeal.
Pastry
2 cups flour
2 teaspoons baking powder
3/4 teaspoon kosher salt
6 tablespoons shortening
3/4 cup milk
1 egg, mixed with
1-2 teaspoon water
vegetable oil or canola oil (for frying)
Curried Mango Filling
4 mangoes, peeled and diced, approximately 2 cups
1/2 cup brown sugar
1/2 cup cider vinegar
2 teaspoons curry powder
1/4 cup lime juice, freshly squeezed
Chocolate Filling
2 1/2 cups sugar
1/4 cup cocoa powder, plus
1 tablespoon cocoa powder
1 pinch kosher salt
10 ounces unsalted butter, room temperature
10-15 servings
1. In the bowl of a food processor, combine the flour, baking powder and salt. Pulse for a few seconds and then pour into a large mixing bowl.
2. Add the shortening and knead it into the flour with your hands until it is crumbly. Add the milk all at once and mix in with a spatual until it begins to come together. Lightly flour your hands and the countertop and turn the dough out onto the countertop. Knead the dough ball, folding over 10 to 20 times. Using a rolling pin roll the dough to 1/3 to 1/2 inch thickness, then cut into rounds using a 2 1/4 inch ring. Roll each round as thinly as possible or to 5 to 6 inches diameter. Spoon 1 to 2 tablespoons of filling onto the dough, brush the edges of half of the dough lightly with the egg wash, fold over being sure to press the air out around the filling and seal the edges together with the tines of a fork, dipping it into flour as needed. Gently press down to flatten and evenly distribute the filling and snip or cut 3 slits in the top of the pie. Dock pies that are going to be deep fried.(poke a few times with a fork rather than cutting the slit)
3. To Pan-fry pies, place a medium saute pan over medium low heat along with 1 to 2 tablespoons vegetable, canola oil or butter. Once heated, place 2 to 3 pies at a time into pan and saute until golden on both sides, approximately 3 to 4 minutes per side. Allow to cool 4 to 5 minutes before serving.
4. To deep-fry pies, heat vegetable oil in a deep fryer or a large heavy pot to 375 degrees. Once hot, add 1 to 2 pies at a time and fry until golden brown(they will float to the top when ready) approximately 3 to 4 minutes.
5. To bake pies, preheat the oven to 350 degrees. Place finished pies onto an ungreased cookie sheet and bake for 25 to 30 minutes or until golden brown.
6. Mango Filling:.
7. Place all of the ingredients into a small saucepan over high heat and bring to a boil. Reduce the heat to low, cover and simmer for 30 minutes, stirring occasionally. Transfer to a bowl and place in refrigerator to cool completely before using as filling.
8. Chocolate Filling:.
9. Place the sugar, cocoa powder, salt and butter into a large zip-loc bag and squish to combine. Cut a hole in the corner of the bag.
10. For each pie pipe 1 to 2 tablespoons of mixture onto the center of the dough.
