You don't.

You are polite and respectful to her. You understand that she's not likely to change her ways after cooking that way for decades.

When you are a guest in her house, you are polite and grateful, and you eat around anything that you don't care for. If she questions why you didn't eat something, you give an excuse OTHER than the fact that you think she doesn't cook well.

Tell her you've been having some health problems and went to the doctor and your doctor told you oh you need to seriously cut down on the fat intake and he gave you a list of things to not eat made with fat and ceratin meat was included. Tell her you've been following the doctor's advise and feel 100% better and you decided to stick with what your doctor advised.

Be wise and do not tell her that she is not a good cook. That will be the first best way to cause strife in your relationship with her and your future husband.

Could politely try to tell her. But do not attack her directly, will mess things up big time. Share what you think with your significant other, get him/her to do it.
