Why do you have to handle anything?.. If your commited to another, then ignore the sweet lady. Sounds like you're a little interested.

Just tell her thank you for the compliment, but you are committed to this other person. Perhaps add that you hope she finds a nice man of her own.

just say no. Make sure she understands the "no".
don't be in her company anymore.
don't be around her anymore
start new friendships where she will not be
busy yourself with good hobbies, or stay home more often and enjoy your commitment.
