If you're cheating and using unpasteurized juice, just add yeast and sugar. Works well, but gramps wouldn't be proud. Depending on the sweetness of the fruit I go with a 3:1 ratio of water and mash, then add sugar (I use 7-10 lbs for six gallons) and yeast. I strongly suggest a one way valve for your fermentation vessel, the balloon idea is not always reliable. Wait 30 - 60 days and enjoy.

find your local homebrew store and get a kit for first couple of tries. when you know you can control temperatures etc then you can make stuff from scratch. I think Lindsays Technical Books has some publications on homebrewing which may be unobtainable anywgere else, they have a free catalogue but you'll have to do a search for address
