I have one cucumber vine in my garden and I'm picking almost 10 lbs of cukes a day, they're getting out of control. Any good recipes or ideas, different ways to prepare them.

10 lbs a day???? wow.. here are the recipes that you can enjoy in your cucumber party (4 to 6 persons)

<<<<<<<<< Cucumber Juice >>>>>>>>>>

Cucumber (as much as you want for each glass)
2 stalks Celery
2 Apples
3 slices of Ginger

Put all the vege into a juicer, enjoy!

<<<<<< Cucumber garlic salad >>>>>>>>>

4 cucumbers
2 cloves of garlic (finely chopped)
2 teaspoon salt (for massage)
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon sesame oil
1 tablespoon rice vinegar

1) Put the cucumbers into a plastic bag with salt, massage the cucumber for a while, set a side for 5 min

2) Wash the salt away, cut the cucumbers in 1.5 inches long, put them in a salad blow

3) Mix the vinegar, sugar, salt, sesame oil in a dressing bowl then mix the cucumbers with the garlic

cucumber (sliced 3 - 4 inches in length)
cream cheese
1 mango (chopped)
2 tablespoon of yoghut

1) Whip the cream cheese, yoghut, mango, cucumber pickle together until the mixture is smooth

2) Spread the mixture on a piece of bread (any kind you like)

3) Put the cucumber slices on the mixture, sandwich it with another piece of bread

500 g Spaghetti (boiled)
4 Cucumber (cut in mouthful size)
2 cloves of garlic (chopped)
60 g basil leaves (chopped)
20 g pine nuts
100 cc EV Olive Oil
6 Black Olive (pitted, sliced)
1/2 cup grated parmesan cheese
1/4 cup freshly grated gruyere cheese
salt
black pepper (optional)

1) Put the basil leaves, pine nuts, garlic, salt, EV olive oil into the blender, blend into paste

2) Boiled the Spaghetti with a pinch of salt in a large pot, drained and cool a bit

3) Mix the Spaghetti with the basil paste, parmesan cheese, cucumber, black olive in a big bowl

4) Sprinkle the freshly grated gruyere cheese and black pepper on top when serve

400 g cucumber (chopped)
50 g mint / peppermint (finely chopped)
100 g icing sugar
350 cc fresh cream
100 cc water
1 fresh lime juice
1 zest of lime
honey (optional)

Put all the ingredients (execpt the fresh cream) into a blender, blend well, then add the fresh cream + honey into the mixture and blend again.

Pour the mixture into a ice-cream maker, follow the instruction of your machine. Chill for a day or so.

CUCUMBER ONION SALAD

1 large cucumber
1 medium onion
1 large tomato
zesty Italian dressing
wine vinegar
salt and pepper to taste

Cut up cucumbers, onion, and tomato in small cubes. Salt and pepper as desired. Add 1 tbsp wine vinegar.
Add enough Italian dressing to cover (more or less to desired taste).

Great as a side dish for many meals.


FANCY CUCUMBER SANDWICHES

2 medium size cucumbers
1 tub whipped cream cheese spread
shaker of dill weed
1-2 packets of dry Italian dressing mix
1 pkg rye or wheat cocktail bread

Wash cucumbers well. Using a fork, scrape down the cucumbers lengthwise leaving "stripes" all the way around. Slice the cucumbers into 1/4 inch slices or thinner. Set aside.
In a small bowl, stir together cream cheese and dressing mix; combine well.

Using a butter knife, spread the mixture onto the individual slices of small cocktail bread (cocktail bread might be found in your deli section rather than the bread aisle, it's just a small and dense miniature version of bread).

Don't cake the slices with the mixture, just a thin layer concentrated in the middle of the slice.

Next, lay one slice of cucumber (per slice of bread) in the middle of the bread. Once done, shake a small amount of the dill weed onto the cucumber slice. Remember that dill is strong and a little goes a long way. Just one or two taps of your finger on the shaker should do it per slice.

The ruffling of the cucumber slices with the fork and the dill garnish really dress up this open faced appetizer. I always get raves about this at parties and requests for it at potlucks.

Just remember to cover them tightly because the bread will dry and the cucumbers will get wilted if left out too long. It's a good idea to do some preparation work the night before, but leave the slicing of the cucumbers and the assembly of the sandwiches for the last minute.


CUCUMBER SALAD

4 cucumbers
1 small purple onion
4 Roma tomatoes
6-10 limes
1 teaspoon red chili pepper or cayenne pepper
salt to taste

Slice Cucumbers, peel purple onion cut in half then in half moon slices, cut tomatoes in half moon slices add cucumbers onions & tomatoes in a bowl. add the juice of all limes, add the chili powder, and salt and mix together. You can serve right away or refrigerate until ready to use.

Cucumber salad- diced cucumber, tomato and green peppers. add chopped parsley. Toss and serve with any dressing. Really anything goes in it but that is how I like it.

Try stuffed cucumbers! Use the same recipe for the filling as Stuffed cabbage/peppers but put it in cored out cucumbers.

Make or buy a onion or dill dip. Dip cucumbers in it.

And then of course just munch on sliced and salted cucumber.

Make pickles, slice them up pack them in jars and there is a pickle spice packet you can buy at the store. Otherwise I just peel and slice and put in a bowl of 1/2 water & 1/2 vinegar, salt & pepper and put them in the fridge. I serve them with every dinner and my husbandpicks out of them all day from the fridge, we can go through a cuke a day.

* 1 cup mayonnaise
* 1/4 cup white sugar
* 4 teaspoons distilled white vinegar
* 1/2 teaspoon dried dill weed
* 1/2 teaspoon seasoned salt
* 4 medium cucumbers, peeled and sliced
Combine all but the cukes and mix well - add cukes and toss to coat!

chop them up and make a cuke salad:

chopped cucumbers
chopped or cherry tomatoes
(deseed the cucumbers and tomatoes before chopping to keep the salad from being watery - no need to deseed the cherry tomatoes)
cilantro
italian dressing (or balsamic vinegar and oil) or whatever dressing you like


Or you can make a Greek Pizza which I just had on Friday

Pizza Crust
Pizza Sauce
Diced chicken
(Bake like a regular pizza)
Then add chopped cucumbers and tomatoes (both deseeded)
and feta cheese and oh, what is that greek sauce - tzaziki? taziki? tsaziki?

Cucumber Relish Recipe
4 1/2 cups cucumbers, chopped
3 1/2 cups celery, chopped
3 cups onions, chopped
2 cups red bell peppers, chopped
1/4 cup canning salt
4 cups water
4 cups vinegar
3 cups sugar
2 teaspoons mustard seeds
2 teaspoons celery seeds
10 half pints.

1. Combine cucumbers, celery, onion and peppers in a large bowl; add salt and water.
2. Cover and refrigerate overnight. Drain; rinse and drain again.
3. Combine remaining ingredients in a large kettle; bring to a boil.
4. Add vegetables; simmer for 10 minutes.
5. Ladle hot mixture into hot jars, leaving 1/4" headspace. Adjust caps.
6. Process for 10 minutes in a boiling water bath.

Yum..summer cukes!

Marinate slices in balsalmic vinegar and olive oil, serve as a salad
Roll into sushi
make into salsa (remove the seeds first)
pickle them
juice them with carrots and apples - very refreshing
juice them and freeze the juice for soup base
cold cucumber soup
peel, cut off one end and hollow it out. Fill with tuna or crab salad, and slice. Beautiful presentation.
(My gramma's recipe) Add it to sunshine salad (lime jello, celery, cucumbers, shredded carrot, and mini marshmallows)

Make them into pickles, and then do my favorite - make Pickled Kimchi out of it. This is how you do:

After the cucumber pickles up, rinse it in water, and then let it sit cold. you want to get as much of the salt off of it as possible. Then you get red pepper for kimchi, sesami oil, and green onions.

Cut the pickles so that they will be circle in shape, and about .5-1cm thick. Put in a bowl. Throw some redpepper (must be for kimchi!), sesame oil, and green onion. Mix it all up, and its ready to go. No need to ferment like cabbage kimchi. Its a great side dish for all!

Slice your cucumbers in a lg bowl. Add a sliced red onion, salt & pepper, oil & vinegar. Mix well and put in refer until cold. Verrrrry simple and can be adapted to add any other ingredients for different occasions. Great for this time of year.
