It doesn't mean 'envy sun' - it means 'want sun' - envie in French can mean to want/need/envy depending on context, but usually need/want. No translation can be exact, as words mean slightly different things in other languages.

You guy's have to know that if you pluck a sentence out of context it takes on a different meaning. If the verb "avoir" was used before what you've written then it would mean "Longing for sun". Otherwise as it stands "Sun envy" which doesn't really make sense.
