I am cooking boneless skinless chicken breast tonight that has been marinated in ranch dressing. I am also having plain white rice. What can I do with the rice to make it better and so that it doesn't taste like paste? I really don't want to add more fat/calories to it.

2 c. long grain rice
1/2 med. onion, chopped
1 large bell pepper, chopped
1/4 tsp. garlic powder
Add salt to taste
1/4 c. olive oil

In a deep saucepan, saute vegetables in oil; add garlic and salt. Then add 2 cups rice and 2 cups water (should not have too much water, this will make rice soggy). Cover rice and set setting on medium high, leave it for 14 minutes and never open until 14 minutes are up. Then open rice and stir only once. Cover rice and set on low for 15 minutes. After 15 minutes check to see if rice is tender. Keep covered on stove top until ready to serve. Feeds eight. (Ratio or rice to water is one to one.)

In Singapore, there's this popular dish called "Hainanese chicken rice," which is basically a fragrant rice eaten with chicken and some vegetables.

How to make chicken rice:

- 3 cloves garlic (pounded)
- 1 tbsp grated ginger
- 1 cup rice
- chicken stock
- 1-2 tsp salt

1) Add 1 tbsp of oil to pan. Brown pound the garlic and ginger till fragrant. Add the uncooked rice and stir fry for about a minute.

2) Transfer the rice to a rice cooker/pot, add chicken stock in place of water, and cook.

It would only add a few calories to cook it in lowfat chicken broth. Or add Mrs. Dash or other seasoning, or garlic pepper, or Butter Buds (they are a powder, low fat or fat free).

Enjoy!

Instead of cooking the rice in water, use chicken broth. You can get it in a can from the supermarket.
