Try Turkey, but in addition to Istanbul, visit the Turkish Riviera and other sites like Cappadocia. Throw away the stereotypes you may have about the country and enjoy! A bonus is that it's extremely inexpensive.

The safest spots at the moment would be Egypt or Jordan, Israel is fine to visit as long as you stay in the Tel Aviv area, avoid points north, like Haifa.

Egypt , the pyramid and the pharaohs civilization. It is safe there and the people are friendy to tourists.
