Yes, Final Fantasy (as most classical RPGs did back in the day and some still do) draws heavily from elements of mythology, both Greek and otherwise. The summoned monsters (or GFs, or aeons, or whatever depending on the game) are kind of like Gods called down by the summoners (a type of holy people, especially in FFX) to smite their enemies, heal their allies, or perform other effective services. I think that the use of the mythological names is a very effective nod to the power of those ancient tales.

I don't play those...but yeah greek mythology is really prevalent in our culture. You see it (discreetly) everywhere.
