My recommendation is that you DON'T! I used to do protection training for private clients and guard dog companies, but I don't anymore. There is way too much liability now - with fatal dog attacks on the rise and many cities banning any breed they consider dangerous.

All the crap you've ever heard about beatings or feeding the dog gunpowder to make him mean are bogus, abusive crap. To make a dog more confident and a better watchdog, expose him to lots of new people and situations. Then he'll be able to tell a threat from a situation that is not serious. Some breeds are naturally tougher, while others will never be aggressive no matter what you do. If you teach your dog to bite, you will have a huge liability problem - you and your family can be sued or even go to jail if your dog injures someone. See the case in California where two dogs killed a woman in the hallway of her apartment building and their owners went to prison for it:

Your homeowner's insurance policy may refuse to cover you if you have a dangerous dog. Most dogs never get to bite someone breaking into your house or attacking you - they bite your friends or visitors. How would you feel if your dog mauled someone's child? If you really need protection that bad, get a gun. At least it doesn't have a mind of its own. http://www.fataldogattacks.com/statistics.html

Depending on the breed of your dog most are naturally protective.
What you should be doing is training your dog for basic obedience and it will allow you to have better control of your dog and teach the dog to listen to you. It will reinforce that you are in charge and that the dog will work for you.
Start with the basics like sit, stay, come, down (very important)
Make sure you work on leash and off leash. Get the dog to where it will down even if it is out away from you.
This will take time and patience but with work you will have a very good dog.
I would not encourage aggression as most dogs are very protective of their masters on their own.

Primarily, just be a good alpha to him. Love and train him properly and be consistent. After that, the most important thing is to train him NOT to attack people.
Most dogs are territorial, and so long as they view you as their territory, they will protect you to the best of their ability. The best thing you can do to further this instinct, is to treat him well and make sure he gets all he needs to be happy--not only physically, but emotionally as well.

Most dogs already have that trait ingrained into their heads. Just so you love him and train him to listen to you, he will always try to protect you.

There are some great obedience courses which would bee the ideal choice - they know exactly how to do it safely and properly.

If he loves you, he will protect you.
Whatever you do don't try to make him really dangerous, or he'll attack anybody.
