First of all, tofu can be found in three distinctly different firmness groups - soft, medium and firm. It's the same stuff, but I think the water content that results from how it's made renders these three different kinds of consistencies.

All to say, a lot of the Asian recipies I enjoy call for firm or medium tofu, and the soft stuff is what is typically used in smoothies and the like...if you try to fry up the soft stuff, you'll just get an interesting soup, in my experience.

So make sure you're starting with the right stuff. The medium stuff can be sliced up cold and eaten with soy sauce - incredibly nutritious, and fast - but sort of an acquired taste.

There are countless ways to cook and prepare tofu - it's a staple in many Asian cultures. Asking for a recipie is sort of like asking for a recipie for chicken - where do we start?

Try adding strips or cubes into any dish you normally cook and see what you think. Also, tofu provides a nice complement to any really spicy or hot sauce or gravy. It firms up nicely when fried, and goes well in a dish with lamb or beef.

I realize this is all pretty generic and broad, hope this is of some help.

You can do all sorts of things with tofu. As it has no flavor of its own, you can flavor it just about any way you like, and cook in variety of different method to give the texture.

Instead of giving you a few recipe, I encourage you to buy cook books for Tofu. There are many out there.

My favorite is,
1) take a firm tofu cutlet
2) drain it well
3) marinate it in soy sauce/mirin mixture
4) pat dry
5) pan fry in small amount of oil

company (from the refrigerator area, by no skill off the shelf) is ultimate. First you would be wanting to press it. that's the main needed step in any tofu recipe. Slice your tofu style of a million-2 in. thick. place between 2 clean towels, & placed some thing heavy (a e book) on right. enable set till the water in out. For a meaty texture you are able to freeze tofu, then thaw in the previous cooking. attempt after freezing/thawing: -Marinating in bar-b-q & grilling, right w/cheese. that's your new, enhanced burger. (you are able to bake this, too.) -Marinating in soy sauce, cook dinner w/stir fried vegetables. Serve w/noodles. -Marinating in Italian dressing. Pan fry. devour in a great salad. -Bread in tempera batter, fry with pineapples.

My all time favourite tofu recipe:

Agedashi (Fried tofu)

- Silken tofu (1 pkt)
- Potato/Corn flour
- 1 tsp grated ginger (optional)
- 1 tsp grated daikon (optional)
- *Dashi stock (you can buy ready made ones like Ajinomoto from asian stores)
- Soy sauce
- Sugar to taste
- Chopped spring onions (option)

1) Soak the tofu in salt water for 15mins. This is to make it more firm and easier to handle. Cut it into large cubes.

2) Combine dashi stock and soy sauce (proportion 2:1 respectively) over heated pan. Add sugar to taste.

3) Pat the tofu cubes dry and dust with potato/corn flour. Deep fry at low temperature till golden brown. Drain well.

4) Pour sauce over the tofu and top it with grated daikon, ginger, and spring onions.

*You can also make dashi from dried shiitake mushrooms and chicken stock.

Another nice way of eating tofu is in a hotpot. Just add whatever ingredients you like (e.g. beef, chicken, fish, vegetables, tofu) to the pot, and cook and eat. :) The stock for the hotpot can be made by using chinese cabbage, chicken stock, and dried shiitake mushrooms.

I use Tofu as if it was Riccata cheese or cottage cheese. You can fix it in tomato sauce and us it over just a bit of Pasta. Tofu is also good if you mix with garlic, celantro, salt, pepper, basil, and a little oregano, paper thin carrots, some onion, and a little tomato as a stuffing for baked green peppers.

Tofu takes on the flavor of what every you cook it with. I buy firm or extra firm tofu. Drain it, pat it dry, dredge in flour with salt, pepper, onion powder, garlic powder, red pepper, any spice that you like. Then dip it in lightly beaten egg (let it drip off a little)...then dredge in bread crumbs also lightly seasoned. I use sunflower oil to lightly fry it in, 'til crispy. I serve it with any kind of salad.

Try a search on tofu on www.kraftfoods.com, too

I have a friend who would crumble tofu and then mix w/ sloppy joe mix or taco seasoning to replace the meat - pretty good.
