Virtually all foods expire sooner or later through bio degradation (ie rotting) or sometimes various chemical reactions due to light/heath/composition. Syrup kept cool and dry in a closed glass container will be ok to use for a very long time but it doent take more than a lick or using a dirty spoon for very active bacteria to be added.

syrup can crystalize like honey, and if left in the cabinet long enough will go bad. (usually it takes up to one or two years for it to actually spoil) if it does get crystalized just let the bottle sit in warm water until it becomes liquid again.

yes, it can become old tasting, and it can even revert back to the state that it was in before, such as sugar.
