I've never made real beef stroganoff before...usually just hamburger stroganoff. I was feeling adventurous this weekend, so I went and bought a beef tenderloin and followed a recipe from a cookbook that Saveur magazine sent me, and there were no mushrooms! Is this correct?

Traditionally, stroganoff was peasant food. Therefore it contained whatever was on hand. Since mushrooms grew in the wild and were free, if you could find them, you ate them.
When I make it I always use mushrooms, but it's not that big of a deal if you don't have them.

Beef stroganoff is made with a cream of mushroom soup base, which of course has mushrooms in it. I don't like the mushrooms in it & pick the bigger ones out. Check other recipes too. Try one of the sources below for great recipes, not just beef stroganoff. A search on kraftfoods.com came up with 8 different recipes for beef stroganoff. A search on bettycrocker.com came up with 10. You might have to experiement with the different recipes on each site to find the one you'll like the best. I've made the meatball one on Kraft's website. It tastes great & my son even likes it. I also omit the mushrooms as neither one of us will eat them.

BEEF STROGANOFF

2 lbs. beef tenderloin or sirloin steak or ground beef
1/4 c. butter
1 can (6 oz.) sliced mushrooms, drained
2 cans (10 1/2 oz. each) condensed beef broth (bouillon)
1/3 c. minced onion
1/4 c. catsup
1 1/2 tsp. garlic salt
1/3 c. flour
2 c. sour cream
8 to 10 oz. uncooked med. noodles
3 tbsp. butter

Cut the meat into strips or cubes. Melt 1/4 cup butter in a skillet. Cook and stir mushrooms in butter for 5 minutes. Remove mushrooms.
In the same skillet, brown meat. Reserving 2/3 cup of the broth, stir in remaining broth, the onion, catsup and garlic salt. Cover and simmer 15 minutes, or until the meat is tender. Blend reserved broth and the flour; stir into meat. Add mushrooms; heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in sour cream; heat through.

Cook noodles as directed on package; drain. Toss with 3 tablespoons butter. Serve with stroganoff.

Makes 6-8 servings.

Why are u shocked about it .?? U made hamburger with mushrooms in it .. SO u can do the same way with Beef.. Be creative .. sometimes i dont aslways follow what the recipe says .. i do add few things to make it more delicious.. Creative ur mind with ur food to enjoy! Dont let the receipe controls you!

The recipe that I use does not call for mushrooms, either. When I made it for my grandma, I added them. My bf is strictly anti-shroom, so I leave them out. Either way is good, i think, although I think it is prettier without...

Not sure I do believe most have mushrooms in it. I don't like mushrooms so I guess it is everyones personal choice, but i do believe it is generally suppose to.

Everyone I know has always put mushrooms in it. I never do, though. Not a big fan of the fungi.

Yes, traditionally it has mushrooms in it. However, I don't like mushrooms so I don't ever put them in!

Yes it does. You can delete them from the recipe if you don't care them.
