Crispy Herb Baked Chicken

Here's one of our "most requested" recipes. The Parmesan-potato mixture bakes up golden and crisp, sealing in the chicken's natural juices. It's as delicious as fried chicken--but with a lot less fuss.
2/3 cup mashed potato flakes
1/3 cup grated Parmesan cheese
2 teaspoons dried parsley flakes, if desired
3/4 to 1 teaspoon garlic salt
1 (3 to 3 1/2-lb.) cut-up frying chicken, skinned if desired
1/3 cup margarine or butter, melted
1 . Heat oven to 375°F. Grease, or line with foil and grease 15x10x1-inch baking pan or 13x9-inch pan.
2 . In medium bowl, combine potato flakes, Parmesan cheese, parsley flakes and garlic salt; mix well. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan.
3 . Bake at 375°F. for 45 to 60 minutes or until chicken is fork-tender and juices run clear.
To reduce fat, dip chicken pieces in 1/3 cup milk instead of margarine.

Kind of an interesting idea, marinade it and use a syringe or something to inject some of the marinade inside of it. Inject it slowly, you wouldn't want giant bubbles of marinade inside of the chicken. Also make sure it is completely thawed, because an icy core can help promote marinade bubbles from injection. Cook it on a low heat, in a pan if you choose and try to get creative with what you marinade and cook it with. Chicken is good with almost anything. Try for example, a marinade with worchestire sauce and potatoes, thinly slice garlic and sautee it extra crispy, place it on a plate along with tomato sauce or A1. There is almost nothing that garlic cannot go with, how about chicken :). Place the chicken on top, and add finely chopped chives on top and parsley on the side, if you want to mix it up sprinkle some shredded cheese on top. Parsley can help tremendously with the presentation, cut off the stems and set it somewhere near the edge of the chicken. I do not like going with instructions too much, I like mixing together ingredients and going by prior knowledge to come up with an idea. Once I even remember adding crushed red pepper to a chicken while pan frying it. I hope that I was able to help, good luck and have fun!

CREAMED CHICKEN FOR POPOVERS
5 tablespoons butter
4 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
1 cup (low sodium) chicken stock
1 1/2 cups milk or cream
1/4 teaspoon sage or Bell's Seasoning
2 cups chicken, tuna, lobster, salmon or beef
1 T chopped pimientos
1/4 c fresh parsley, minced
1 T chopped shallots
1 can Veg-All (optional)
1 dozen freshly baked popovers
In a skillet, melt butter and add chopped shallots, parsley, and flour. Stir continuously. Add salt, pepper, chicken stock and milk and turn to medium high heat until mixture comes to a boil, then reduce heat to a simmer. Do not allow to scorch.
Add chicken (or other optional meat). Add pimientos and Veg-All (drained) if using, (can substitute frozen mixed vegetables).
Cook over low heat until mixture thickens.
Using a sharp kitchen shears, cut an X into the top of popovers and squeeze bottom to open.
Scoop creamed mixture into the center of the popovers while they are still hot.
To plate, scoop a small portion of the liquid onto the dish below the popover and sit popover in the center. Sprinkle popover top with paprika (optionally) and garnish with parsley.
Note: If you don't have low sodium chicken stock and will be using regular chicken stock or bouillon instead, reduce salt to 1/8 teaspoon

here's a quick and yummy recipe for a chicken casserole.
It's called poppy seed chicken
Poach your chicken breasts in seasoned water until cooked thru. You can also use a whole chicken or pieces, the goal is to get a bout 3 cups of bite size cooked chicken
In a bowl add 1 can cream of chicken soup, 1/2 cup mayo and 2 tbls poppy seeds. Add pepper to taste ( the soup is salty)Mix well. Add 1/3 cup milk to this and mix well.
Grease a baking dish well, add the chicken and the soup mixture. Top with 1 sleeve of crushed buttery crackers *( ritz or the like) sprinkle 1 more tbls of poppy seeds over the top. bake at 375 covered for 30 minutes, take off top, and bake until brown.
serve hot with rice and beans or other side dishes

I doubt this is new, but many people don't think about it...
Using an oven safe dish, place chicken in one even layer.
Use any type of sauce you want, the kind you buy at the store, teriyaki, BBQ etc. Pour over your chicken, and let marinade for at least 2 hours.
Pop in the oven at desired temp,sit back and relax.
The chicken comes out so tender it melts, and is infused with the flavor of the sauce. And, you don't have those icky burnt bits on it you get from traditional BBQ-ing.
Try it, turns out perfect every time.

Having been a Railroader for a number of years I know that you can cook a Chicken and Potato's wrapped in aluminum foil on the Locomotive oil cooler or manifold (depends how fast you want to eat). One Chicken takes about 400 miles.

Sure.
Take a thawed piece of chicken. Cut it into strips. Heat up the electric frier and throw her in. When she is cooked (doesn't take very long) add in basil and salsa and let the flavours melt. Put in a wrap with lettuce and all the fixin's you enjoy.
If you're health conscious, use a low sodium salsa and a little goes a long. Stuff in as much lettuce as you can. One piece of chicken can make 2-3 wraps depending on the extra's you put in. Happy cooking!

Have you ever made honey bar b cue wings? You just fry them the way you usually do then dip them in bar b cue sauce with about 1/4 cup of honey and bake for about 15 minutes on 350.
You could stir fry breast cut in strips with the vegetables of your choice and put it over rice or lo mein noodles.
You could marinade your chicken and put it on the grill. There are so many marinaades to choose from just get a flavor of your choice. I prefer a fruity type of marinade for my chicken or pork.

Have you tried beer can chicken yet?
Cover the chicken's skin in a spice rub(We use montreal chicken spice)
Take a can of beer, the darker the better, only don't use Guiness, as the "widget" inside will melt, and remove about 1/4 of it. (drinking it is a good method) Then insert the can of beer inside the cavety of the chicken.
Place upright in a pan and put on the BBQ
The beer will evaporate and baste the chicken from the inside.

sure the following marinate and marinate the chicken for two days in one of the gallon plastic reclosable bags. 1 bottle of soy sauce, 1 cup of sugar, 1 cup of oil, 3 tablespoons of chopped garlic, 1 tablespoon of dry ginger, 2 bunches of scallions(or any type of onion) and a cup of toasted sesame seeds. Mix all together and put in the bag with chicken so you can turn and cover chicken well... then bbq or you could cut up and use on shiska bobs. But you will enjoy it..
