In different cultures the order of the meal is different, and in many cases, it also vary from lunch to dinner.

In Europe the order can be radically different, although some standards are still there... and in China, the soup is often the last. In some places we serve "banquet style", with each course presented after the previous is cleared. In others, the "family style" is preferred, with all the items presented on the table at the same time...

I think the actual reasons you are inquiring about are linked to culture and usage, rather than actual digestion reasons. Soup first, in cold climates, had definitely the up-side of warming up. In other places, a clear soup at the end help digestion.

A formal dinner goes through four courses starting with savoury items and ending with a sweet which is a natural progression for the taste buds. Cheese is normally served as a fifth course together with Port. This is a combination of savoury and the sweetness of the Port. So a formal dinner would be:

Soup.
Fish.
Meat
Dessert
Cheese & biscuits

Soup is like an hors'd oeuvre. For you to have an appetite to eat a lot during a gathering, you need to take in some soup before having the entree. After having the appetizer and entree, you can then have the desert. So yummy...I'm craving...tsk tsk stk

soup is warm and expands the stomach to get it ready for the entree, a soothing start to dinner. Dessert is something sweet to help digest and to help end the meal as a pleasurable, memorable experience.
