Herb Butter
3 tablespoons butter or margarine, melted
1 tablespoon lemon or lime juice
2 teaspoons dried tarragon leaves, crushed
1 teaspoon dried dill weed
1 clove garlic, minced
in small bowl stir together butter, lemon juice, tarragon, dill and garlic. Drizzle over tuna.

put the button and herbs into a bowl and mix together with a fork.
Add the lemon to taste, but keep mixing.
You could replace the lemon with Lime and add crushed garlic.
Cook the tuna steaks putting a little bit of the mixture on the tuna just before serving.

Saute some finely chopped onions or scallions in butter, add a large splash of white wine (about 1/3 cup, more if you want) and reduce on a simmer until the liquid is about halved. Add in your herbs (I suggest dill and tarragon for fish, but you could use whatever you fancy) and freshly squeezed lemon juice to taste and simmer for about 5 more minutes.
You could strain the onion out after simmering if you want a smooth sauce. If you like garlic, add just a bit in with the onions.

the most important for tuna is preserving it straight forward. somewhat garlic powder blended with season salt is solid for it. do not overlook the pepper though. Even onion salt or powder or lemon pepper seasoning. Tuna is uncomplicated to over-season, so take it ordinary on a number of the spices.

Try any recipe for hollandaise sauce, which is buttery and lemony. Or use a ready-made hollandaise. Here in France we can buy excellent sauces in cartons.
