This meatloaf is full of flavor, and a delicious twist on an old favorite. Bacon, onions, mushrooms, and Swiss cheese are added to ground beef and baked to perfection."
Original recipe yield: 6 servings.

INGREDIENTS:
12 ounces chopped raw bacon
1 small white onion, chopped
5 button mushrooms, chopped
1 1/2 pounds extra-lean ground beef
1 egg
1/4 cup evaporated milk
6 ounces shredded Swiss cheese, divided
1/2 cup corn flake crumbs
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Place bacon in a skillet and cook over medium heat until the pieces are browned. Remove with a slotted spoon to paper towels. Discard all but 1 tablespoon of bacon grease. Stir in onions and mushrooms, and cook until soft. Remove from heat.
In a large bowl, stir together beef, egg, and milk. Stir in the onion and mushrooms. Mix in about 4 ounces of Swiss cheese, and all but 1 tablespoon of bacon. Stir in cornflake crumbs, and mix until well blended. Shape into a loaf, and place in a meatloaf pan.
Bake in a preheated oven for 1 hour. Drain fat, and sprinkle with remaining cheese and bacon. Return to oven, and bake until cheese is melted, about 5 minutes.

You can also tell I'm an older cook, notice lack of measurments. LOL
1 lb. mixed meat (this is a meat loaf mix of meat you can get at the grocery store. It's beef, veal, and pork mixed together.) Garlic salt, onion powder, minced onions, and then you mix the meat together with water and breadcrumbs. How much water and bread crumbs you add depends on how big the loaf you want. I can make a HUGE loaf our of just a pound of meat by adding enough bread crumbs and water. Mix till it's holds together, form a loaf, and place in oven dish, cover with alun. foil. Cook at 350 degrees for about an hour. At that time take the foil off and mix together Campbell cream of tomato soup with about 1/4 cup of water, and pour over loaf, and allow to bake, uncovered for another 20 minutes. Yummmy. tomato gravy can be spooned over meat, and mashed potatoes

Amish Meatloaf
2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon
1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

2 lbs 85-87% lean beef
1 lb. ground pork
1 lb. ground veal
1 cup Italian bread crumbs
1/2 to 1 cup onions (finely cut) OR 1/4 fresh chopped chives
(Depends on how strong of a flavor you want in the meatloaf...I like the chive, you taste it but it is subtle and I have two large plants in my perennial garden for such use!!!)
Salt and fresh ground black pepper...approx. 1-2 tsp. each.
Mix together well and form a loaf in your baking pan ...and then the secret ingredient is:
BACON.....lay 6-8 strips of bacon on top of the loaf before baking.
The cooking bacon imparts flavor into the meatloaf.
Cook COVERED at 350 degrees for an hour, and then uncover the loaf for the last 15 minutes to crisp the bacon.....ohhh delicious!!!
OMIT BACON for LOWER FAT MEATLOAF OR PERSON WITH SPECIAL DIETARY NEEDS!!!

2lbs ground beef 1 med. onion chopped 1med. Bell pepper (any color I use green) chopped 1/2 cup instant rice 3/4 cup Italian Bread crumbs or cracker crumbs 2 eggs slightly beaten 1 - 1 1/2 cups tomato sauce 2 Tbs. Worcestershire sauce 2 heaping Tbs. chopped/minced garlic 2 cups cubed Velveeta cheese 1 Tbs Seasoning salt 1Tbs. Greek seasoning 1Tbs. Soul food seasoning In a large bowl combine all ingerdients. Works better if you use your hands. place in a casserole pan or roaster pan bake at 350 Degrees for 1 1/2 hrs.

this is called VEGAN MEATLOAF
start by grinding up two small vegans
( that should be easy to do most of the time they are under 100 pounds)
Now remember the color of there hair will tell you what they taste like
remove meat from bone
grind
add salt & pepper
use two fresh loafs of fresh bread and cut in to cubes
6 eggs
4 celery stalks
6 spanish onions
35 oz of ketchup
22 slices of bacon
mix make meat loaf in the form and people cook for 45 mintues
remove from oven let rest for 15 mintues then cut of there head and enjoy

1/2 pork ground meat
1/2 beef ground meat
chopped onions to taste
minced garlic to taste
2 raw eggs, beaten
salt and pepper to taste
mix all ingredients in large bowl
add Italian bread crumbs until right consistency to shape into loaf
place in a loaf pan and bake at 350 covered until done.
uncover and place favorite cheese on top.
cover and place in oven until cheese is melted.

i usually make mine with-
1pond of chop meat
2 eggs
instead of bread crumbs i use ritz crackers ( it gives it a crunchy texture)
raw onions
and about 2or 3 cup fulls of bbq sauce...
it makes a great meat loaf...

my neighbor and i made one last week and he insisted we use raw oatmeal ( plain, not the instant flavored kind ) instead of breadcrumbs, which i thought sounded kind of icky but it was great !
