Go by the experation date on side of egg carton. If in doubt, throw them away! Better safe than sorry. To use left-over eggs, try new recipes. Bake a batch of cookies/brownies (easy) or a pot of fried rice.
Eggs now come in smaller packages (6 count) rather than the traditional 12. They also have a carton of egg beaters. (pre mixed eggs) leftovers can be frozen.

Really, only way to know for sure is to crack it open. Eggs are pretty good keepers. If yolk is all one color and white is clear (tiny flecks of white are okay),and no odor, then you're safe. The higher each one stands (especially the yolk), the fresher the eggs is, but freshness and safeness are two different items. Odor is the main clue: DO NOT EAT if it smells bad.

I ate some eggs that had been in the fridge for 3 months. I was scared but it turned out ok. I wouldn't recommend trying it though. Too risky. Maybe you should get powdered eggs since you don't eat that many.

there should be an expiration date on the side of the carton somewhere. I've been told you can eat eggs up to 5 days after the expiration date. but if it's only been a month since you bought them they should be ok but I'd still hunt for the expiration date.

Put them in water and if they float, then get new ones. Don't go to wal-mart as I have found their eggs float on the day you buy them. Must be trucked outside refridge, or over six months in too warm storage or some other reason that they get them cheap and sell them to you 3 cents cheaper than other stores. Must be enough water to cover them by at least an inch.

The American Egg Board says they'll last 4 to 5 weeks past the pack date as long as you've kept them refridgerated. Good luck!

Put them in water. Fresh eggs will sink and bad eggs float. This happens because as they get older, the air pocket gets bigger, making them buoyant. Eggs stay fresh in the fridge for about six months.

my first suggestion is that they sell them by half dozen, get those. As with them being bad, the only way to know for certian if they are bad is to break them open. They may not have a smell to the, but you will konw that they are bad if the egg whites have a haze to them.

They only stay good for a couple of weeks.
You could always test them by placing them in water: if they sink, they're fresh, if they tilt they're old, and if they float, they're rotten.
