coz we were ordered to say that and aslo our greeting is peace be upon u,peace is our religion.
when we say or write the name of any holy person we say that coz we beleive that Allah reward us for saying it.
Also Muhammed(PBUH) said that when we say be be upon him (PBUH) Allah give him his soul back to say peace be upon u .....(and he answer with ur name).
we love holy persons so we say that
