The general rule is you can survive 3 minutes without air, 3 days without water and 3 weeks without food, but you can probably go a little longer if the conditions are right and you are in good shape.
People start to get pretty squirrelly after 72 hours without sleep. In most cases you wouldn't be able to last a week without sleeping. Although there are a few cases on record of people with severe insomnia who have gone years without sleeping...but even they need a quiet rest period.
