Olives are pitted with an olive pitter. Basically the machine cuts a plug the size of the pit in one end of the olive and the pit is pushed out "by an x shaped punch" at the other end of the olive. Commercial pitting machines may also be able to stuff the olives, too. If you want to pit olives at home, you can get a hand-held olive / cherry pitter.

They are hand pitted with a special pair of tongs. The olive rests with one end on the lower part of the tongs on something that looks a bit like a raised Phillips screwdriver. The upper part is then lowered and presses the olive onto the lower part and the fruit flesh is taken down with it, while the pit is held back by the "Phillips screwdriver" to be discarded. Look at a pitted olive and you will recognize the hole made by the " Phillips screwdriver".
It is hard to describe the process, but maybe you get it.

the same way cherry's are pitted. there is a machine that pits them , kind of like a hole puncher. and it cuts out the pits. you can also do it by hand, with a hand held device. go to www.ebay.com and search olive pitter, or cherry pitter. then you will see one.
