Chicken breasts stuffed with prosciutto and cheese. Simply pound the breast til thin and flat and place a slice of your favorite cheese and prosciutto, roll up dip in egg wash and Italian bread crumbs and bake at 350 til done. Not one morsel was left on the plate. I used extra spicy pepper-jack as I like a little heat.

It depends on how gormet you want to be (and I guess what age you r too) I have made this meal a lot and always got great raves on it. It is called chicken oscar. You cook up boneless skinless chicken breasts... I cook them in a frying pan with a little bit of oil and season them lightly with pepper and salt. While those cook boil water for fresh asparagus & boil them for approx 10 mins or until tender. You also need to get crab meat get the long pieces not chunk or flake style. I like the imitation crab because it taste just as good and is cheaper. And you need to get a pack of hollandaise sauce usually in the gravy/soup mix/tomato sauce aisle at the grocery store. It is in a packet similar to a koolaid packet but slightly bigger (if that helps) Prepare the sauce as instructed do not over cook. Place the peice of chicken on the dinner plate and then alternate on top of the chicken the aspargus then the crab until the top is covered. (the aspargus should be cut in half so it isnt so long and the crab should be sliced long ways) After you cover the chicken with that pour hollandaise sauce on top. As a side dish you can serve rice pilaf or liptons chicken flavored rice. It has always been a hit and takes very little time to make and they will think you're a gormet chef. Good Luck and enjoy!

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream.
(I served it over minute rice, it was very good! But can also be served over pasta or mashed potatoes)

Fettuccine with Cream, Basil and Romano
Ingredients
(4 servings)
4 ea Bacon slices; chopped thick
1/2 c Whipping cream

1 x Or:
1/3 c Basil; chopped fresh
1 x Salt and freshly ground pepp
1 x Romano; freshly grated
4 ea Green onions; chopped
1/2 c Parmesan; freshly grated
1/2 c Romano; freshly grated
1/2 lb Fettuccine
1 x Parmesan; freshly grated
Instructions
Cook bacon in heavy medium skillet over medium heat until beginning to brown. Add green onions and stir until softened, about 1 minute. Add cream and simmer until beginning to thicken, about 1 minute. Mix in 1/2 cup Romano cheese and chopped fresh basil. Meanwhile, cook fettuccine in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain well. Return to hot pot. Add sauce and stir to coat. Season with salt and pepper. Serve immediately, passing additional cheese separately. *** My notes: When I made this, I used 1 cup whipping cream, 1/2 cup each Parmesan and Romano, 1 tbsp dried basil, and substituted 4 or 5 thin slices of Prosciutto for the bacon- frying slightly in butter. I used about 6 ounces of "Pesto Linguini", which is a thinner pasta containing basil. We like LOTS of sauce!

if you want a good main course, just get some rib eye steak, marinate in Kikoman Teriyaki sauce (with or without special flavour i.e. garlic) then pan fried in a well heated hot pan - 5 mins on each side. Wah lau... you got a nice juicy steak served with some fresh crunchy lettuce and maybe top it with some instant mashed potatoes.

Fettucini Alfredo

Use real butter, real cream and real parmesan. Nothing could be easier or faster and if you use the "real" stuff, nothing can taste better. (lack of expensive ingredients cause restaurants to skimp and miss the mark every time.)

And you can adjust the sauce to as thin or thick as you like and then back again.
