Bananas & diced Macadamia Nuts w/ Sliced fresh strwberry & whipped cream on top. Choice of whatever syrup you like but best to warm it up in the microwave first. Yum! Now I have a craving for pancakes, maybe tommorrow am. Sliced Kiwi Fruit is good also.

I don't put fruits into the mix because they have a tendency to fall apart, but what i do do is sprinkle the fruit onto the batter immediately after it's poured onto the griddle. Fresh blueberries or sliced bananas are my favorites. When making German pancakes (pfankuchen), I've used sliced fresh peaches, nectarines, and pears (not all at once though -- yuk).

Blueberries, thawed if they had been frozed, and drained and dried, but only add them right after you drop your pancake on the griddle. Then flip to cook the other side when it's time. If you mix the blueberiies in your mix it will turn the batter blueish-purple, which isn't bad either.

I've also mashed up a bananna while mixing my pancake mixture and it was yummie too!

You can put almost any type of berry in the mix, also applesauce, diced apples, bananas, peaches, raisins, cranberries, cherries...pinapple, but it would need to be canned and drained of juice. Any fruit that could withstand the cooking without losing its flavor or quality.

As soon as you spoon your pancake batter in the skillet, drop in a handful of blueberries in the top of the batter. (Or if you want a change from fruit - drop in chocolate chips or pecans!)

Blueberries, (the smaller the blue berries, the better), cherries,
apples with cinnamon, apricots. I hate strawberries, and bananas.
