I prefer olive oil as well. But for cooking pastries, animal fat makes a better, flakier pastry. There is a shortening that mixes animal and vegetable fats thats okay. I usually use lard when making certain Mexican foods-like tamales and emanadas because they just dont come out right if you dont. I know its bad for you, but, like everything else, use in moderation, not for every meal and I think you will be just fine.

Nope never cooked with lard. I wont eat anything cooked with it either. Not just cos i am a vegetarian but lard contains huge amounts of saturated fat that is bad for you. Olive oil, canola oils are best for cooking as they have more unsaturated fats.
Many people probably continue to cook with lard cos its they like its unique flavor.

I use olive oil for most dishes.....when it comes to german food however there is nothing better then Lard or Butter..Lard to fry Schnitzel..lard to fry german apple fritters the taste i so much better..homefried potatos are just better in lard(which actually is very similar to bacon grease)in germany they even eat Lard sandwiches!better skip those!so yes when it comes to my grandmas and moms recipes there is no substitute(or they would haunt me from the grave)

the last time I used lard was to make tamales with my family on Christmas Eve. but it's really bad for you.

I use lard occasionally to make a spectacular pie crust. I have found nothing that makes a better, or more flaky crust!
