Chicken soup is indeed good for the soul. It's really just chicken stock with shredded meat, some vegetables, and perhaps some noodles or rice. Serves eight.


Ingredients:
2 cups cooked rice (optional)
chicken meat
1 tbsp. vegetable oils or butter
2 tbsp. finely chopped Italian parsleys (for garnish)
3 carrots - sliced thinly into coins
One recipe homemade chicken stocks
1 cup trimmed green beans
2 cups cooked egg noodles (optional)


Steps:
1. Make chicken stock (See "How to Make Chicken Stock" in Related eHows.)

2. Reserve the chicken carcass and shred or chop the meat. Be careful to remove any cartilage, skin, or other "disgusting parts."

3. Skim fat from broth (or better, let chill and then remove the solid fat).

4. Saute carrots and green beans in the oil or butter over medium heat until soft.

5. Bring the stock to a simmer on the stove.

6. Add carrots, green beans, shredded chicken, and optional rice or noodles to the soup and heat through. Garnish with the parsley and serve.

Tips:
You can add other vegetables if you want: celery, green peas, onion.

These amounts are variable - some people like a lot of stuff in their soup, others don't. Add more or less, as you choose.

The stock is the heart of the soup. There's not much point making it with canned broth.

Ok this is real simple, healthy and tastes great.

1 large pot (1gallon or larger)
1 whole chicken, rinsed well in cold water inside & out
1 bunch carrots, peeled, cut in half and the ends removed
1 bag of celery ends cut and cut into 1/2" pieces
4 chicken bullion cubes
4 bakers potatoes, peeled, cut into small pieces
1 tablespoon of garlic salt
1 tablespoon of finely ground black pepper

Put all this (not the potatoes), including the whole bird into the pot, add fresh water until the bird is covered . Cover and put on medium heat. Stir it from time to time. When the meat starts falling off the bird, use tongs and remove skin, gristle, and bones.This is time for you to reduce the heat to a low simmer. This is a process that you will do for a while. It seems time consuming, but considering you do not forget about it all together, you can do something else while the bird is cooking (don't leave the house though!). Once you are certain you have all those things removed, add the chopped potatoes and recover.
Once the spuds are soft, and it taste the way you hoped, your soup is ready. You may want to add more salt or even experiment and use other vegetables (corn, peas, or even beans), some add pasta, but I don't like that doughy stuff getting in the way of the meat and veggies. This whole process will take about 3-5 hrs.Happy eating. Cheyenne

1 Whole chicken (free ranch chicken is preferable)
10 dried red dates (pitted), available in chinese herbs shop
2 big slices of fresh ginger
salt

1) Skinned the chicken, wash it thoroughfully

2) Water bath the chicken in a big pot with boiling water, then wash it under the running tap water for a while to wash away the fat and blood

3) Heat a big pot with water, put all the ingredients into the boiling water, boil for 15 mins then simmer the soup for 2 hours

4) Add salt before serve

Buy a 3-4 lb whole chicken. Remove the inner guts(discard) and neck.
Fill a big 6-8 qt. stock pot 1/2 full of water. add chicken and neck. Add additional water till it covers the chicken carcass. If carcass floats you can lay two small plates over it to push it down.
Salt and pepper about 1/2 tsp each or to your taste.
Bring to a slow boil on medium to medium-high with the following:
Add 2 dried bay leafs, 2 garlic cloves crushed, 1 onion cut in half.
Add 2 carrots and 2 celery stalks cut into quarters
Cook for 2-3 hrs removing the protein foam at the top with a spoon.

Remove chicken carcass and neck along with all of the veggies and bay leafs. For a clear broth put stock thru a cheese cloth to get more floating pieces out.
Put stock into freezer for 1/2 hr or till fat congeals at top and remove fat using a slotted spoon.

Bring broth to a boil and add pieces of cut up celery, carrots, green pepper, zucchini or whatever veggies you desire.
Add egg noodles and cook till softened about 6-8 mins.
Add pieces of chicken by hand picking meat off bones and shred into pot. You can choose all white breast meat or add dark meat.
Add 1/2 cup milk and 1 Tbsp flour mixed together for a creamy version
Enjoy.

I like to make "healing "chicken soup.So that means 5 cloves of garlic ,peeled,1 tablespoon of fresh chopped ginger,small handful of fresh chopped parsely,2 carrots broken in 3 peices,un-peeled,4 stalks of celery,one little onion.peeeled and chopped,3 jalapeno peppers ,seeded and chopped fine,One whole chicken with skin and bones.Boil ,then bring to a simmer for about 2 hours ,skimming off the grey fat that floats to the top.Refrigarte 'til the next morning,skim off all the fat,clean flesh from the bones and save the white meat to be put back in the soup later.Strain all the solids and put the broth in a fresh soup kettle.Using the fresh broth ,add your favorite vegetables,potatoes,green beans,peas,carrots and celery,your favorite herbs too,parseley,dill ,sage....simmer for about 30 minutes,add the chicken and enjoy.Toss in some cooked noodles or rice,or if you want,dumplings would be nice too,maybe blueberry dumplings?

take a big pot of water -- dump in a whole chicken, cut up in eighths and a bunch of veggies (carrots, potatoes, celery, onions, garlic, dill, parsnip) also add salt and pepper. Boil it for a long time (bring to a boil, kep simmering, covered for 3-4 hours). If the water boils off, add some more water but if it stays covered, you should be ok.

Let it cool -- skim off some of the fat which congeals at the top and reboil. Eat it.

Here's a way to make two meals with one chicken. 1st meal is to make a roasted chicken for sunday dinner - then save the carcass and whatever chicken is left on the bones....next day throw the carcass in a big pot of water throw in some spices, and let it boil away till the bones fall apart, take the bones out and pick off whatever chicken hasn't fallen off and throw the meat back into the pot....add either some boullion cubes or chicken broth to taste....throw in some parsley, celery and carrots....throw in some noodles and cook till tender and there you go.....it's better than campbells

Go to the grocery store, buy a can of Campbell's Chicken Noodle Soup, pour it into a bowl with one can of water, microwave it for 2 minutes, eat and enjoy.
