I read an article about cooking muffins using apple sauce
in place of sugar and oil. Would this work? and would you still use the buttermilk. Does anyone have a receipe.

I've used applesauce in place of oil. You can cut down on the sugar a bit, especially if you use sweetened applesauce, but it will probably taste to use unsweetened applesauce and leave the sugar alone.

Try 1/3c applesauce = 1/2 c oil

Yes, still use buttermilk. The liquid of the sauce replaces the liquid oil, but your recipe will still need the milky liquid.

I would only substitute the applesauce in equal porportion to the Oil, not the sugar. Yes you can use buttermilk and should not have to adjust the recipe. If too wet add a tablespoon of flour , one at a time until it is not so wet.

follow any recip ethat you like , but only replace the apple sauce for the oil, apple sauce, actually add moisture in place of the oil, umm if your looking for a less sweet muffin you can omit the sugar, but all i know is that if you do the oil / sauce replacement, its exactly the same amount, for example, 1 cup oil to 1 cup apple sause, it also helps to preserve the muffins for longer, :>
