Western Science was created by Christians and Christianity (in large part).
From a Christian point of view, the moon does not change its shape.
The visible bright portion of the moon waxes and wanes because the "day/night" boundary on the moon changes its orientation towards earth as the moon orbits the earth.

I'm not sure I understand your question. Are you using the moon as a spiritual metaphor, or asking if religious people accept the plain science of the rotation/revolution of heavenly bodies?
From a creationists POV, the moon's phases were installed as a way to count days, weeks, months, and seasons.
Yes, we accept the plain science of planetary bodies and the movements thereof. It is simply part of good engineering design.

The scientific reason is pretty clear, however, from a Jewish perspective the waxing and waning of the moon is compared to the Jewish people who "wax and wane" throughout history.

there are very clear scientific reasons. it all has to do with position and shadow. I don't think those are ever disputed. I'm sure there are plenty of whacked out religious ideas for it though. Don't pollute you head with those though. Check out some astronomy websites.
