id like to send her off with some good feelings. she is a single mom and so id like to focus on her and her kid. also she goes through phases of depression and i think she is somewhere in the middle of one now.
id really like to say something warm and sweet.

If you want something short and to the point how about
"I hope you have a day as beautiful as you are."
or if you want a full paragraph tell her you'll be thinking about her, and that you think she is an amazing woman in so many ways, an amazing mom, amazing friend, and an amazing beauty.

you could maybe say "i was just thinking about you and just wanted to tell you how much i love you. im going to miss you while your at work. i'm going to be thinking about you. call me when you get off of work so i can hear your lovley voice. i love you" just say something from your heart. depending on how her personality is knowing that you cared or are trying to help her through her depression might be all she needs and might make her happy.
