I have made creme brulee tons of times and it didn't set up this time. I did use new containers and they are deeper. What changes do I need to make if the ramekins are deeper? More cook time? Deeper water bath?

start with a bath of already hot water first, cook a little longer, and it is possible the dishes are just a bit too deep for them to set up. There must be a limit. As far as the bath, it need only be as deep as the custard level in the ramekins

Increase the cooking time and since you have deeper containers, increase the depth of the water bath so that the water reaches halfway up the container.

I would cook them a little longer. The deeper dishes probably require more cooking time.
