My cousin makes wedding cakes professionally. She has done a bazillion diffrent kinds. I think my favorites have been the multi flavored. Each tier is a diffrent flavor. My very fave was one with 5 tiers. The bottom and top were both red velvet (so the one that gets frozen is what you had that day) the 2nd was german chocolate. The 3rd was white with strawberry filling. The 4th was carrot. Everybody got what they wanted. It works out well.
If you chose to do this type I would pick one frosting though, or else it will look like a mess. Cream cheese frosting is universal, it goes with everything.

No but I wish I had...I think less of the cake would be wasted if people served something that is actually liked by everyone. Such as a huge cheesecake wedding cake or one layer of cheesecake, one layer of carrotcake, chocolate cake (white or milk chocolate), maybe even a layer of ice cream cake. Or you could even serve a blackberry cobbler or your favorite pie instead of a cake. I think it would be really cool to serve Candy Apples as favors....especially if you plan to have a fall wedding. Mrs. Prindables is a really awesome Candy company that is famous for their Candy apples. They do wedding apples too. Try the website.... http://www.mrsprindables.com/store/index.asp?rectype=occasion&DEPARTMENT_ID=50. You could even just copy the designs and make the apples yourself.

At our wedding, we had a glass 5-teir tower, with each platform covered with lovely merengue desserts, the total cake had enough desserts for all our guests!!

Our cake was chocolate with chocolate icing which was unheard of 12 years ago. It was beautiful, the decorations were done in an a real light chocolate so they were kind of ivory colored.

My neighbour makes afro caribbean ones by soaking the fruit in rum, then liquidising it. Its the best fruit cake I've ever tasted and its torture when she's baking.
