Were the doors even locked? If so they picked the lock or used a slim-jim. Coat hangers only work on older model cars and more often then not get stuck and cause problems. Once you're in a car you hotwire it. There's a pair of wires under the steering column that electricity passes through when you turn the key. Find those wires, cut them, touch them to each other. You'll get sparks and the car will try to start. Once it does drive off.

it depends on what sort of car, but one way is to take a coat hanger and untwist (you can also use a slim jim) it but still keep the hook at the end you then stick it between the linning and the window you can then hook up the lock and unlock the car and then it's a simple matter of hotwiring the car and driving of

was it a new car with the chip in the key that makes it "un stealable" ?
pick up the August 2006 issue of WIRED magazine, there's a detailed article about how they do that, and why the insurance companies are screwing people over.

they prolly used a slim jim to unlock the door and if they were really good they wouldn't have damaged nothing, then they may have used a lock pick set or a electric lock pick to start the car
