I'm looking for some simple meals that are quite healthy and don't take forever to prepare. Thanks for any help :-)

This takes a long time to cook but it doesn't take a long time to prepare. Also you don't need to keep an eye on it.
This is what I do for dinners. I'm a mom and a college student and it sure helps out with time.

I bought a slow cooker. The other day I bought a whole chicken rinsed it. Put it in slow cooker with some water and italian dressing. I let it cook for 8 hours on slow. I bought some frozen vegies that only took about 10 min. to cook.

You can do this with cuts of chicken to. I have done that and through in some baby carrots and potatos.

Roast is easy. Stick it in add some salt and pepper and some water and again cook on slow 8 hours.

pork chops and mushroom soup and water slow 8 hours.

I just started expermenting. I'm sure if you look on google slow cooker recepies you will find other stuff.

here is a recipe for a really nice pasta dish....

Get some pasta of your choice (I like the little bows)
Get as much as you need and cook it as directed on the packet.
while it is cooking fry off some peppers and onion (you can buy frozen chopped peppers in bags.. they last for ages)
after the pasta has cooked drain the water out and put it back in the pan. then add the onion and peppers as well as a decent amount of tomato puree, basil and a splash of water.
Mix it all together over a small flame for around 1 min.
pour into a bowl (or leave in the pan to save washing up : ) ) and eat...
this dish is great because there is very little mess and very little preparation. the only thing that needs cutting is the onion, and i think you can even buy bags of frozen chopped onion as well. the basil with the tomato puree guve a really rich and expensive taste for hardly any money at all. Also it takes little time only 1 min more than the pasta cooking time. usually about 8 - 12 mins.

pasta cost a £1 for a decent bag
tomato puree cost about 80p
frozen onion and pepper about £1 each
basil cost abou £1.50p

sounds expensive when you add it up but you would probably get about 3 or 4 meals out of the bag of pasta and the rest will last even longer (maybe about 10 meals for 1) all that probably adds up to about 50p - 60p per meal. cheaper than chips :)

This is what I do when I'm going to be out all day and don't want to wait while cooking a meal at night:

In the morning, brown meat or perhaps cut up leftover roast or ham and put it in a slow cooker/crockpot. Add 1 pouch instant garlic-mashed potatoes, 1 chopped onion, frozen vegetables, oregano, basil, perhaps sage, more garlic, perhaps 1 chopped carrot and 1 chopped celery stalk, 1 can canned tomatoes, 1 can tomato sauce, and a couple of cans of water. Let simmer during the day, and munch to your heart's content at night!

If soup isn't your thing, keep cold cuts, cheese, and lettuce around, along with your bread of choice.

Tuna fish and eggs are both great staples for quick meals.

If you like soup, Martha Soup is easy, fast, and savable.

1 can each of: Progresso minestrone, Progresso Lentils, Rotel Tomatoes, (large) All Veg (it's in a can, just go down the canned veggie isle), kidney beans (or a different bean if you prefer). Also, one bag of Morning Star quick ground meat. Optional...we like to mix in a whole bag of baby spinach, and a pint of pre-chopped mushrooms as well.

Basically, get a large pot. Brown and heat the meat. Add in everything else. Cook on Med.-Low for an hour, and eat. Check the ingredients, but it is very very low in calories if measured out (I think we came up with 105 cal's per cup). Freezes well, tastes like a home made soup/stew, and well heck...you're just gonna love it. *grin* It's vegan, so if you've got any friends over that don't eat meat products, it's perfect for them. Here are a couple of downsized suggestions:

Grilled Cheese Sandwich: 2 minutes & 1 dish to wash
1-Make toast
2- Butter both pieces
3- Cut chesse onto each face up side
4- Microwave for 30 seconds

Pizza:3 minutes & 1 dish to wash
1-Microwave pepperoni seperatley for 45 seconds
2-Spread Pizza sauce on plain or whole wheat torilla
3-Grind or cut Mozzerella Cheese on top
4-Place cooked Pepperoni on top
5-microwave for 40 seconds

Fettuccine Alfredo:Havn't tried this one yet(anyone?)
1- Boil pasta
2- Microwave Creme & Butter until boiled
3-Mix in Cheese until melted, microwave & mix until smooth
(Sauce = 1/4 Creme, 1/4 butter. 1/2 Parmesan cheese)
4-Pour sauce over pasta

Obviously, alter ingredients to suit your own taste.
Anybody else have some quick & dirty meals (Cheapness helps)

1 can veg-all
1 lb burger
1can tomato soup (non-diluted)
shredded cheese
1 can biscuits ( grands butter work best)
Flatten out biscuits -try to make rounder..Press with heel of palm. (This is the time consuming part
fry burger, drain, open veg-all, drain,
mix all ingredients and add a healthy tablespoon to each biscuit. Bring edges of biscuit together, fold over pinch.
Bake as directed for biscuits 8-10 minutes. Kinda like a hot pocket. Good for on the go!

Pasta doesnt take too long to cook...it's just like Noodles.

Get some instant pasta sauce and you'll have a nice healthy meal within 10-15 minutes.

Invest in a good wok and rice cooker.
Veggies stir fried with a little bit of oil and garlic, ginger root or green onion, can also add a little bit of pork or chicken to it. - common veggies to stir fry: spinach, nappa cabbage, peas, corn, broccoli, green peppers, onion, bean sprouts, just about anything.

One thing that I make a lot of is what I call 'poor mans alfrado' half a can of cream of mushroom, half a can of cream of chicken, add a few spices (basil, garlic, ect), some chicken, serve over rice or noodles.

Another thing to do is buy some bread crumbs, coat the chicken, and bake. put some sauce and cheese on top.

Cook stuff that will freeze, just do an afternoon of cooking and freeze it in portions.

I freeze spagetti bolognese, cottage pie, stew, casseroles, all sorts.

Stir-frys are quick and easy and can be healthy if you chuck enough veg in. I stir fry peppers and thinly sliced carrots, add some chicken or beef, chuck in a bottle of sweet chilli sauce and some beenshoots, shredded cabbage, whatever is to hand.
