The Recipe :
(2 servings)
2 TBS oil
4-7 Thai chili, minced
1 TBS sugar
1-2 packages holy basil
1/2 lb ground chicken or chicken breast
1 TBS garlic, minced
3 TBS fish sauce
1. Mince garlic and chili together. Clean and pick kra-prao leaves (holy basil) from their stem. It may appear like a lot of leaves, but the leaves will shrink when cooked and this dish's flavor comes from the leaves.
2. Fry the garlic and chili pepper in oil over high heat. When garlic starts to turn brown, drop the ground chicken in. Stir constantly. The juice will start to come out. Keep stirring until all the juice is gone. It might take a couple of minutes.
3. Add sugar and fish sauce. Then add Thai basil. Quickly turn it over a few times to mix the leaves with the meat and then remove from the fire and put the kai phad kra prao in the serving plate or dishes. Serve hot with rice. Normally in Thailand, kai pad kra prao is served with a small bowl of chili pepper in fish sauce.
Tips and substitutions:
You can substitute ground turkey or pork for ground chicken. Some people like the meat cut up in bite size pieces rather than ground. In Thai restaurants in America, Sweet basil or Thai basil is usually used for this dish. While an acceptable substitute, it is not quite the same.
Nam-pla-prig (Chili Fish Sauce)
1-4 Thai chili
2 TBS fish sauce
1/4 lime
1 TBS sugar
Slice chili and place them in a sauce dish. Add fish sauce, sugar and lime juice.
Tips and substitutions:
For a vegetarian chili fish sauce, substitute light soy sauce for fish sauce.

This is a delicious stir-fried Thai noodle dish. It is basically noodles stir-fried with soy sauce - sounds kind of plain, but it is truly delicious.
8 ounces meat of your choice (beef, chicken, pork, or seafood)
8 ounces noodles of your choice (normally fresh rice noodles are used)
1 tablespoon fish sauce
1 tablespoon palm sugar (or substitute regular sugar)
1 tablespoon oyster sauce
3 tablespoons soy sauce
1 cup broccoli cut
Additional Ingredients for marinade of meat
1 egg
2 to 3 cloves garlic, crushed
1 tablespoon oyster sauce
1 tablespoon cornstarch
1 tablespoon rice wine
1 tablespoon palm sugar
1 tablespoon sesame oil
1 teaspoon black pepper
Slice the meat into bite-size pieces then marinade it in recipe described above for 1 hour.
Prepare your noodles. If they are fresh, you do not need to do anything, but if you are using dry noodles, you will need to soak them in water for 15 or so minutes until they are soft.
You will need a medium to large sized skillet. Grease the skillet with the oil of your choice, and then cook the meat until it is almost done. Then add in the rest of the ingredients, and stir-fry for about 2 minutes

Well not sure if these will work but go to www.recipesource.com
when you are on the main page click the link that says Thai.
in the search box type the word phad you will find a few recipes one says Phad Thai which has some of the ingredients you listed above. Another says Phad Sai does not sound like the one you asked for and the last is thai noodles in sauce.
Maybe one of these will help you. This is a great site for all kinds of foods. check it out.

I do my own noodles, it's very easy. Put as many egg you want in a pile of flour on a table, salt and spices if you want and put together it to a dough. Take chicken-brot and boil the noodles in it ..... take up the noodles when ready and mix it with cheese. Very simple but great to eat with a salad
