You can't make her let you. She is the parent you are the child and what she says goes. You might try politely asking her if during the holiday you can stay up an extra half hour or something but if she says no then thats just the way it is. You also didnt' say how old you are, letting you stay up may not even be appropriate.

First of all, I would start acting mature enough to stay up past your bedtime. Instead of whining about how terrible and unfair it is that your mother is being, well, a parent, try talking to her as an adult.
Try a conversation like this.:
You: Mom, I need to talk to you. Is this a good time?
Mom: Sure honey.
Y: Mom, since it is the holidays, could I have an extended bedtime for the next few days?
M: No.

At the point where your mom says "no" to staying up, prove your maturity by keeping your voice level and explaining that you think you are old enough to stay up at a NORMAL time. Make a compromise and suggest that you'll stay up until 11:00 for just a few days.
Also, be reasonable. Don't expect her to give you free reign over everything. Don't sulk in your bedroom because you don't get what you want.

Well, I doubt you can MAKE her, but if you sit down with her, and have a reasonable discussion, and propose a reasonable bedtime just for holidays, maybe she will change her mind.
Show her in your behavior that you're mature.
(It is actually better to always go to bed at the same time, anyway. Otherwise you get all messed up when you have to change it back to go to school. But if it's not a big difference in time, it shouldn't be too much of a problem. Suggest a plan whereby you shift your bedtime back to school hours before vacation ends.)

Momma always knows best. Its better to hit the bed early and get up earlier in the morning. Your not missing anything late at night man. Too much negativity on TV then. You see what im talking about in a couple years.

She's trying to keep you on a schedule so that you won't give her a hard time when school starts again. And she probably doesn't want you sleeping and wasting the whole day. There's plenty to do in the morning! Your friends will be awake too!

Maybe she's let you stay up late, and you were crabby the next morning, or she couldn't get you to wake up.
Let her know you won't sleep away the next day if she does let you.
