As a chef, I can tell you that it is much easier to control the amount of salt you're using by pinching than by shaking. I never use salt shakers..at home or at work. As chefs we also very rarely use table salt. Kosher salt is by far the most widely used, though Sea salt in a grinder like pepper is gaining alot of popularity.

Two reasons, it much easier to control the proportions, and secondly kosher and sea salt are larger grained and wont fit through the holes. As a third reason there is a lot of humidity in kitchens the shaker would clog up

It's a matter of taste .You like it hot more holes in the pepper shaker like it salty or just the taste of salt more holes in the salt shaker. Traditionally the salt shaker has more holes.Salt was relatively easy to come by while pepper had to be imported from far away so fewer holes in the shaker helped conserve your supply.

Aw, daddy still spanks you, and the cooks use "there" fingers instead of "their" fingers? WOW!! I'm sorry for everything I said to you in the last answer. You are right...I must be a dumb-***; but when you and your family have to move again, just know that it is because someone like me bought the property. I can only hope that one day you too can afford to not know the difference between a motor and an engine. I wish you all the best of luck with your issues, and I hope that you can make the mobile home community proud! Or wait is it a trailer....oh hell I guess you will have to help me with the difference between that as well. Because their hands and fingers are more accurate the a salt shaker in determing how much salt is being used.

Because chefs add salt to recipies in "pinches" with their fingers. A shaker only slows them down.

The THING TO DO with chefs is to use sea salt or kosher salt, both very coarse grinds. They don't come out of the salt shaker.

you really can't tell how much salt with a shaker but you can find a pinch with your fingers

Because it's hard to "measure" what comes out of one shake of a shaker. With finger tips, you learn over time, whether you need one "pinch" or more.

Good question! I don't like salting my food before I eat it, but I do use pepper. I notice when they say to add salt, they seem to use way too much.
