Not sure why this is in dating, but what the heck.
I would want to be a shapeshifter, able to turn into anything at all and keep my mind and senses. I would use it to do the crime fighting stuff, you know, sneak into Osama's hideout as a gun, catch bank robbers as a stack of 20s, that sort of thing.
However, since you listed this in dating, I'll talk about how I'd use this power for FUN, like on dates.
1) Take my girl on a scenic drive, by turning into a nice sports car convertible, or whatever car she wanted. Let her drive me around, have fun, maybe go for a picnic. I'd turn back to me when we got there of course.
2) Let her fly me as a kite, or maybe turn into a hangglider to take her along. Let her play fetch with me as a dog.
3) Take her shopping and just turn myself into money for her to spend. I could turn back that night after being deposited, though that would sort of be stealing. Maybe it would be better to go to a casino with her and let her put me in a slot machine. I could transform inside to rig it for her. Still stealing, but the casinos are all crooked anyway.
4) Once we got to the point in our relationship where this would be ok, turn into a swimsuit to go to the beach with her, or better to an amusement park that has water rides. I would fit fine and be able to change into whatever she wanted to wear at the time. Then, after a nice day, maybe something silky and thin...hmm, think I'd go back to human at that point!
Oh, bad news if this sounded good to you. I'm married, but my wife might like some of these ideas if I ever got that power.

I would like to become invisible at will. That would be really powerful. You could steal from the rich and give to the poor without ever being caught. You could do a whole lot of good stuff for a lot of needy people in this world. For example, you could mess with the IRS computers and save some poor souls from getting tax notices. You could pick the Lotto numbers of your choice and then give the money away to the needy. You could eavesdrop on the President and catch him lying. Ooooooh just imagine, eh!
Yes, I think becoming invicible could be pretty cool!
