Ok, this is my own recipe. Hope you try it because it's very flavorful.
Baked Chicken with Gravy
Rub
2 1/2 tbs paprika
2 tbs garlic powder
1 tbs onion powder
1 tbs cayenne pepper
1 tbs dried oregano
1 tbs dried thyme
Preheat oven to 400.
1 whole chicken for roasting
Olive oil
Kosher salt
Ground black pepper
2-3 cans chicken broth
3 tbs unsalted butter
3+ tbs flour
Mix together well the six dry ingredients for the rub.
Rinse chicken with water and pat dry with paper towels.
Pour olive oil over chicken and rub in.
Liberally apply kosher salt and ground black pepper over chicken, including the cavities.
Spinkle rub over chicken, both sides.
Place on wire rack in roasting pan, breast side up.
Add 2 cans chicken broth to bottom of pan for basting. If broth starts to dry up during baking, add another can of broth.
Place roasting pan in oven and turn heat down to 350.
Bake, uncovered, 20 minutes to the pound or until juices run clear after poking between leg and thigh.
Baste with the broth every 20-30 minutes.
When done, remove from oven, place on a serving platter and cover loosely with aluminum foil.
Melt butter in saucepan on stovetop over medium heat. When melted add flour and make a roux. Stirring constantly until the mixture arrives at the desired color you wish. I like a nice brown chocolate color. Now add the broth and drippings leftover from the roasting pan. Bring to a boil, reduce heat to a simmer and stir until the gravy achieves the consistency you like. You should not have to add any seasonings to this gravy. When gravy is done, transfer to a gravy boat or large bowl and place on table. Remove foil from chicken, carve and serve with gravy. The gravy is great over mashed potatoes or rice. Add a steamed vegetable and you've got a nice three course dinner.
Serving suggestion: Pair with a Sauvignon Blanc from New Zealand.

Buy some fresh (live) Clams, flat leaf parsley, cherry tomatoes (cut them in half), green chillis, red onions (chop roughly - big pieces are good) and Fresh Parmesan. Boil some good spaghetti. While this is boiling saute the onions in olive oil, add the tomatoes and a few chillis, (we like lots but others don't - vary according to your taste) add wine or some light stock. Set the table, decant a bottle of Italian wine, light a few candles and put some Italian music on the stereo. The Spaghetti is nearly ready after this, take a strand and test, if it is softening but still firm in the middle (i.e. not quite done) this is the time to add the parsley (ripped not chopped) to the sauce. Don't season, the clams are the seasoning. Add the clams (discarding those which don't close when tapped with a spoon) and put on the lid, make sure it stays on but there is a small amount of room for steam to escape (a glass one is ideal as you can see when the clams have opened), the clams will cook in the steam in 1-2 minutes. Drain the spaghetti. When all the clams have opened (or in 2+ minutes if you have a non see-through lid) stir in the spaghetti and put a few pinches of cracked black pepper. Serve in warmed bowls with crusty bread and grate Parmesan over the lot (italian purists will want to kill me for that suggestion but it just tastes so good...) Enjoy.

Kind of late for your dinner (tonight), but it will be good for tomorrow's dinner.
Simple, fairly quick, and tastes great.
EGG & CHILI CASSEROLE
10 eggs
1/2 C butter
1/2 cup flour
2 four oz. cans chopped, mild green chilis (Ortegas)
1 tsp salt
1 pint cottage cheese (small or large curd)
1 1/2 lb mont. jack cheese (shredded)
Grease 9x13 pan lightly.
Whip eggs until blended.
Add remaining ingredients.
Stir together.
Pour into pan.
Bake at 350 until set. (30-45 min.)

Ingredients
2-1/4 lbs. chicken, cut up
3/4 cup honey
1 cup buttermilk baking mix
2 tsps. dry mustard
1/2 tsp. paprika
1/4 tsp. salt (optional)
1/8 tsp. pepper
2 Tbsps. vegetable oil
Instructions
Coat chicken pieces with honey. Combine baking mix and next 4 ingredients in a dish. Dredge chicken in mixture. Heat oil in a heavy nonstick pan over medium high heat. Carefully place chicken in hot oil, in batches if necessary. Cook about 5 minutes per side, or until golden. Reduce heat to low and cook 15-20 minutes more, or until juices run clear. After browning, chicken may be placed on a baking sheet and baked in a temperature 350°F oven 25-35 minutes, or until juices run clear.
and eat with Ingredients
2 cloves garlic, bruised, optional
1 lb. european salad (or other packaged salad mix), or other salad greens
4 radishes, trimmed and sliced
1/4 lb. red onion\raw, sliced into rings
1 green bell pepper\raw, seeded and cut into thin strips
1 cup cherry tomatoes\raw
1/4 cup nonfat Italian dressing, or other dressing
1 cup croutons, plain or seasoned
Instructions
Rub garlic cloves around inside surface of salad bowl (optional). Discard garlic. Add next 5 ingredients and salt and pepper to taste. Add dressing and toss. Serve with croutons.

Make some grilled porkchops...
Use center cut or boneless chops. Make a few cuts in the meat and place them into a plastic freezer (ziploc) bag. Then add 1/2 bottle of italian dressing to the bag and seal. Let chops sit in bag for a couple of hours (or as long as you can). Then just throw them on the grill. Wonderful! You can serve them with corn on the cob (in stalk, wrap in alum. foil and also cooked on the grill) and a fresh salad. Very easy, little time consuming and fairly cheap.

SPICY SHRIMP COCKTAIL
2 lb shrimp, cooked, peeled and deveined. Chilled.
4 med tomatoes, diced
1 bu cilantro, finely chopped
1 fresh jalapeno, diced
2 cloves garlic, crushed
1 onion, diced
1 large avocado, diced.
1 large bottle ketchup
1 jar cocktail sauce, hot or mild
hotsauce, like tabasco or tapatio
6-8 lemons
saltine crackers
In a bowl, add shrimp and squeeze lemon juice from 1 or 2 lemons on it. Put back in fridge.
In a large stock pot, add 4 cups cold water.
Add the entire bottle of ketchup, cocktail sauce, cilantro, jalapeno, garlic, onion, tomatoes. Stir content until completely mixed.
Squeeze 4 lemons into the mix. Add hot sauce to the mix according to taste. If you like it hot, add 6-10 tsp. If you want it mild, add a 3-4 shakes (approx 2 tsp).
In a bowl, Add the tomato mixture into the mug then add a serving of the chilled shrimp and serving of avocado. Serve chilled and with crackers.
To make the cocktail hotter, add more hot sauce.
To make tangier, add more lemon juice and ketchup.
Serves 4-6

Pot roast- one roast, one can Cream of Mushroom soup, one packet of Lipton's Onion soup. Combine in large pot with enough water to barely cover roast. Cook in oven at 350 degrees for 4 hours.
Mayonnaise chicken (sounds gross, but is really good)- Take thawed chicken breasts, slather with mayonnaise & season salt (can also use garlic salt) on both sides. Put in baking dish. Bake uncovered in oven at 350 for 45 min to 1 hour.

I love Rachael Ray, because she has such simple, tasty, and QUICK meals. I chose one of hers that's my favorite, hope you like it :) It's really tropical and doesn't heat up the kitchen too much since if you use the grill.
Teriyaki Chicken w/Warm Carrot Ginger Slaw
1 1/2 pounds chicken breast cutlets
1/3 cup teriyaki sauce
4 tablespoons vegetable oil, eyeball it, divided
1 rounded tablespoon grill seasoning (recommended: Montreal Steak Seasoning) eyeball it in your palm
1 small savoy cabbage, 1 1/2 pounds
1 bunch scallions
1 cup, a couple of handfuls, snow peas
1/4 cup honey, eyeball it
3 tablespoons cider vinegar, eyeball it
3 tablespoons pickled ginger, drained and thinly sliced - found on Asian foods aisle
1 sack, 10 ounces, 2 cups, store bought shredded/julienne cut carrots
Salt and pepper
In a large plastic food storage bag, combine chicken cutlets with teriyaki sauce, 2 tablespoons oil and grill seasoning. Close bag and combine to coat evenly. Let stand 15 minutes.
Preheat an outdoor or indoor grill or grill pan to medium-high.
Cut cabbage into quarters and cut away core. Shred the cabbage and set aside. Cut clean, trimmed scallions into 3 inch lengths. Pile scallions lengthwise and julienne them into thin strips. Pull the threads from the ends of snow peas and julienne into thin strips, lengthwise, like the scallions.
Drizzle honey into a small bowl. Add vinegar and combine with a fork.
Place chicken cutlets on grill or into hot pan and cook 3 minutes on each side.
Heat a nonstick skillet over high heat. Add 2 tablespoons oil, 2 turns of the pan. Add pickled ginger and cut carrots and stir-fry 2 minutes. Add cabbage and stir-fry 2 minutes more. Fluff and toss veggies with tongs so they stay dry and crisp while cooking. Add scallions and snow peas and stir-fry another minute. Add honey and vinegar combination, pouring it all around the pan in a slow stream. Cook the liquids down 30 seconds more then turn off heat. Continue to toss the slaw and season it up with salt and pepper to your taste.
Slice the chicken meat thinly on an angle. Mound up 1/4 of the slaw on each plate and place the sliced chicken along side, edging its way up the slaw salad. Serve immediately.
Pineapple Spears w/Lime & Honey
1 large ripe pineapple
1 lime
Vegetable oil or cooking spray, to coat grill
Honey, for drizzling
Preheat grill or grill pan.
Cut ends off the pineapple. Stand it upright and cut off the skin in strips. Quarter the pineapple lengthwise and cut out the core. Cut each quarter into 3 spears. Zest the lime and reserve. Cut the zested lime in half and squeeze the juice over the spears. Brush the grill pan or outdoor grill with vegetable oil or spray lightly with cooking spray. Grill pineapple until evenly marked all over, 5 minutes. Garnish spears with lime zest and drizzled honey.
