ok, i sell liquor for a living, so i have tried everything (literally) made.
vodka - grey goose, skyy 90, ketel one
rum - stick with bacardi, it might not be the most expensive, but it is the #1 selling spirit in the US for 30 years in a row. and it tastes the best
gin - stellar, bombay sapphire
tequila - partida (it is brand new on the market), 1800 (the anejo, not the reposado that is sold everywhere) this 1800 comes in a wooden box, sometimes with hand painted pictures on it
scotch - dalmore 28 year or the macallan 30 year sherry oak
whisky - woodford reserve
cognac - anything by remy martin. it is the only cognac made with the finest champagne. and of course this is the company that makes the infamous remy called louis the 13th. that however is approx $1200.00 per bottle
you also need to have grand marnier, cointreau, bailey's, and kahlua for mixing. these are the best of those types out there.
i hope this helps you.

Bourbon: Wild Turkey 101 Rare Breed. Can't beat it!
Vodka: Grey Goose
Canadian Whiskey: Gibson's Finest (but you can only get it in Canada)
And that's all I drink so I don't know about any others.
Great idea! Good luck. I am sure your bar will be VERY COOL!!!!!
