I have tried several recipes w/o good results. Flat greasy or dried out cookies are not what I am looking for. Remember the big puffy cinnamons clouds from childhood?? Can anybody help me to recreate them?? thanks tina

How to Get the Texture You Want in Your Cookies

Puffy - If you like your cookies all light and puffy, try some of the following tricks: Use shortening or margarine and cut back on the fat, add an egg, cut back on the sugar, use cake flour or pastry flour, use baking powder instead of baking soda, refrigerate your dough before baking.

Chewy - If chewiness is your desire remove the cookies a few minutes before they are done, while their centers are still soft and not quite cooked through. The edges should be slightly golden but the middle will still look slightly raw. Use brown sugar or honey as a sweetener. Try using egg yolks instead of whole eggs, this will add some extra moistness to the cookies thus helping to be a bit more on the chewy side.

From my study, the adaptation in crisp vs. chewy is the egg! I also, favor to replace a million/2 the butter with applesauce, lowers the energy and ldl cholesterol. quite than upload a recipe right here I honestly have blanketed an internet site with a mushy chewy Chocolate Chip Cookie recipe. P.S. I hate shortening in my cookies. Butter is a lot fit for you!

basically a snickerdoodle cookie is a sugar cookie with cinnamon on top. find an "old fashioned soft sugar cookie" recipe and as you dust the tops with sugar before baking, also dust with a hint of cinnamon,, OR, use the "cinnamon toast" sugar mix in the baking aisle.

Try using the same recipes but don't flatten the cookie as much. You could also not cook them as long
