KOLIO FOURNO (BAKED MACKEREL)

3 pounds Mackerel
Salt & pepper to taste
1 Lemon
4 teaspoons Garlic -- chopped
4 teaspoons Onion -- chopped
2 tablespoons Parsley -- chopped
2 teaspoons Green pepper -- chopped
1 cup Oil
1 pound Tomatoes, peeled -- strained
1/2 cup White wine

Clean & wash fish; season with salt & pepper. Place in pan. Squeeze
lemon over fish, then refrigerate for 30 min. Sprinkle garlic over fish, then
onion, parsley, and green pepper. Pour oil over all, then add tomatoes. Bake
in preheated 250 F. oven for 15 min.
Add wine. Baste fish with pan sauce, and bake 30 min.

If you have Mackeral fillets you can just put them in the microwave for approx 1-2 mins - with brown bread and salad YUMMY

Fish is simple to cook in many ways. on answering your question
if its whole give it 10 mins for every 2oz to be safe in an oven. if cooking in liquid 20 mins max.

Yes, you can. I put olive oil on fish with salt and pepper. Cook until the fish is flakey. By doing that check it with a fork.

but I would put it in foil with butter and hebs of your choice cook until it is flaky

Dip in dry Paxo sage & onion stuffing mix and bake - fantastic! (According to my husband - I'm vegetarian!)

wrap it in foil put butter or olive oil on it and some herbs. lovely with olive oil!!
