Girl Scout Shortbread Cookies Copy Cat Recipe #18489
It's too bad you can only get Girl Scout Cookies once a year...until now!!!!
1/2 cup butter flavor shortening
1 cup powdered sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
2 tablespoons beaten eggs
1/2 teaspoon baking soda
2 tablespoons buttermilk
1 1/2 cups all-purpose flour
1/8 teaspoon baking powder
In a large mixing bowl, cream together the shortening, sugar, vanilla, and salt with an electric mixer.
Add the egg and beat mixture until it's fluffy.
Add the baking soda and mix for about 20 seconds, then add the buttermilk and mix for an additional 30 seconds.
In another bowl, combine the flour and baking powder.
Pour dry ingredients into wet ingredients and mix well with an electric mixer until flour is incorporated.
Roll the dough into a ball, cover it with plastic wrap and then chill it for 1 hour.
Preheat oven to 325 degrees.
Roll dough out on a well floured surface to 1/8 inch thick and punch out cookies with a 1 1/2 to 2 inch cutter.
Arrange cookies on an ungreased cookie sheet.
Bake for 12/15 minutes or until golden brown.

5 to 6 cups self-rising flour 2 cups sugar 2 eggs, beaten

Sift 4 cups flour into large bowl. Make a weel in center(that means
a hole in center of flour). Pour sugar, eggs, shortening, butter and vanilla. Add buttermilk gradually, working all ingredients into flour.
Add more flour till a stiff dough is formed> Chill 30 minutes to make easier to work. Roll out and cut with biscuits cutter. Sprinkle with sugar and bake at 375 deg. for 15 minutes or until light brown. You can leave the sugar off the top (optional).

I found this recipe on allrecipes.com. It's the same basic recipe my mother uses for her shortbreads and we just can't get enough of them.
INGREDIENTS:
1 1/2 cups butter, softened
2 cups all-purpose flour
1 cup confectioners' sugar
1 cup cornstarch
1/4 teaspoon salt
--------------------------------------------------------------------------------
DIRECTIONS:
Work all the ingredients together with your hands until blended. Shape all of the dough into 1 inch balls
Bake cookies on ungreased cookie sheets, 2 inches apart at 300 degrees F (150 degrees C) for 20 minutes.
Let cool 10 minutes then carefully lift with spatula to cake racks to cool. Store in air tight container with wax paper between layers. Cookies keep well.
Variations: Flatten some balls with tines of fork and press 1/4 of a red or green glace cherry in center of each. Make thumbprint indentation in some balls and fill with a tiny bit of jam, jelly or marmalade. Dip some balls in slightly beaten egg white and roll in finely chopped walnuts. Bake as they are or make an indentation in top and spoon in a little jam or marmalade. Dip some balls in egg white and roll in desiccated coconut. 2 sticks butter,1/2 c sugar,3 eggs(seperated)save whites to brush cookie dough before baking,1t vanilla,2 1/2 c flour.cream butter,yolks and suger until fluffy,add in flour 1/2 c @ until blended.form dough into rectanlge,wrap in plastic,let chill for 30 min.remove from frige,with reserved whites brush outside of dough,slice,place your cookies on your cookie sheet ,brush with whites,bake until golden about 8-12 min.(you should always pre-heat your oven.bake @350*
