it's also good to seperate the eggs and whisk up the egg whites to a soft peak then folding them in at the end for a great fluffy texture. final touch...no omelette is complete without lots of cheese. which ever cheese tickles your fancy but i love aged cheddar with this recipe. i hope you enjoy it!

This is the coolest way to fix omelettes. I've tried it and they come out perfectly...and look like something out of a cookbook.
Mix 2 eggs and small amount of milk in a bowl. Have different ingredients ready to add. I like bacon or ham, cheese, onions, green peppers, and sometimes mushrooms.
Pour egg mixture and your choice of add-ins into a sandwich size Ziploc bag. Put the bag into boiling water (already have that going on the stove) and let it boil for exactly 13 minutes. When done, unzip the bag, and the omelette slides right out onto the plate...it's great!

Mmmmmm, caramelized onions & mushrooms (cooked in sherry) & a little hot sauce then load on the cheese (and salsa). Also, I like to add salt, pepper, dill, and a bit of nutmeg to the eggs. They cook best if you spray a non-stick pan with Pam, pour in the eggs, turn to medium-high heat, and COVER...leave for 2.5 minutes or so, depending on the number of eggs, and when you uncover it will be mostly cooked and slightly separated from the edge of the pan, which makes it easier to fold over. I like my eggs a little brown, and I usually flip the egg over before adding filling. Put some Lowry's Garlic Spread (from the spices section of your store) on the outside of the cooked egg for an extra treat!

Ingredients :
4 eggs
15 new potatoes
2 onions
3 tablespoons olive oil
Recipe :
Wash, peel and thinly slice potatoes.
Slice onions.
Beat the eggs in a bowl, season.
Heat oil in a frying pan, sauté onions.
Add potatoes and leave to cook over a low heat for 20 or 30 minutes.
Leave to cool and add beaten egg.
Cook for 15 minutes in frying pan.

* Fry chopped onion,chopped green chillies & 1/4tbs.Maldive fish
* Add beaten egg mixtureand the fried onion etc.
*Heat any vegetable oil & pour mixture.Cook it over a moderate fire.
