If you want them for different pages or sections, you have to make section breaks. Example. A 5 page document with 2 sections. The first section is pages 1 and 2. At the end of page 2, click Insert/Break/Next page Section Break. Click OK. The next section break needs to come after page 4. So at the end of page 4, do the same thing.

Now for the header/footer. If you go back to the first page, click View/Header/Footer you will see a header come up at the top of page one and it will clearly say something like 'section one header'. As you scroll through the subsequent pages and sections you will see the header chage to section two header. Make sure you remove the 'same as previous' from the header footer toolbar for each time you want to either channge or blank out the header etc etc.

Create a section break before and after where you want a specific header/footer to go...then be sure when you get to the page where you want a different header/footer, you remove the "same as previous"...then you can make it what you want, and it shouldn't affect all headers/footers in the document.
