Probably something wrong with your recipe. When I used to make it with my mother and neighbors it was better than what could be bought in the stores.

Make sure to add plenty of salt(My grandmother's recipe uses a shocking 1 tsp of salt per cup of flour!) and use a gentle hand when mixing it. It does not need to be kneaded like bread. Gently mix the ingredients like you would a muffin or quickbread until it's almost all incorporated and then wrap it in plastic and let it rest in the fridge for 10 minutes or so. Then proceed to roll it out adding a finger touch of water to "dry" spots and a small sprinkle of flour to any sticky parts.
Keep practicing, even bad homemade noodles are still delicious!

Pasta has to be made with the right ingredients and it takes practice. Done well, fresh pasta is excellent plus you can add flavors to the pasta.

somethings amiss. my grandma made the BEST homemade pasta....i believe she just used flour and eggs....maybe a little water. it was much, much better than the dry cr*p you get in the grocery store.

you might try a new recipe. ...or... You might have too much liquid in the dough
If you have a kitchen aid mixer, try the pasta attachment, It is great!!!!!!!!!!
