i remember when milk came in bottles it always had a layer of cream on it but not now. why?

because it is homogenized
that means a process has been done to prevent separating u can undo this by freezing the milk then allowing it to thaw

It's pasteurized now. Unpasteurized milk is a "health issue" now as it can contain microorganisms that can make humans sick. Although it never affected the people back in the day. You can check with dairy farms in your area to see if this type of milk is available. Good luck.

Sigh, I used to love that also. It's the pasteurization process, removes the separation between cream and milk. The heating process does it. It's still there, but permanently mixed in due to it.

You might be buying skimmed milk or you might be buying homogenised milk. You can still buy ordinary milk with the cream on top though. Silver top.

Just the way the milk is now processed. It is now homogenised, basically means the fat with the milk no longer separates, so it lasts longer

because the milk is homogenised as well as pasteurised therefore the cream is in the milk but blended so it doesnt rise to the top

Milk has the fat mostly or all skimmed out of it nowadays. Cream not so good for your arteries I hear.

if you get organic milk that is not hogenized, the cream will float to the top
