It's not an herb, but I sometimes will add boiled carrots and mash them into the potatoes. My family loves this, especially for holiday meals.

Fresh Marijuana is a wow but you were probably birthed during the Bush Clinton Bush Decade and view such natural substances with abhorrence. Another M is Marjoram, also sage and Basil, but in small amounts. Not an herb, but Garlic, with the old but reliable stand by, Parsley.

Roasted Garlic and Chives. Add some sour cream or heavy cream and some salt and pepper and you'll have mashed potatoes to die for :)

Use your imagination. Use them all.
All herbs will give a special and distinctive flavor to your mashed potatoes and then you can pick the one you like best.

I add fresh garlic from time to time--don't eat mashed potatoes much but when I do, that is what I put in them. :)

Fresh parsley or chives, rosemary, dill, etc. Another good extras are baked garlic and/or, bacon, parmesan cheese and of course just before serving a big dollop of cream. Bon appetit!

My favorite is when I having red meat with mashed potato I add horseradish to the potato........MMMMMMmmmmmMMMMM

Chives. Fresh are best, but freeze dried will do fine. You can also add a bit of parsley garnishment if you wish. Bon Apetit.

Well..........................why not try adding a mix of all those herbs that will go well with potatoes and will not dominate its taste & flavour .
It can be parsley, basil, mint, coriander etc.
