Ingredients


1 12-oz can of SPAM® Classic
1 1/2 cups complete buttermilk pancake mix
1/4 cup of water
2 eggs
1/2 cup applesauce
1 tsp vanilla
1/8 tsp ground cinnamon
18 popsicle sticks, short kabob stocks or toothpicks
Vegetable or light olive oil
Honey, maple syrup and applesauce, for dipping



Cooking Directions


Cut SPAM widthwise into 6 sections (1/2-inch pieces). Cut each section into thirds. In bowl, combine pancake mix, eggs, applesauce, cinnamon and vanilla. Slowly add water and stir until combined. Place SPAM pieces into batter and coat evenly. Meanwhile, heat a large nonstick skillet with a small amount of vegetable oil over medium heat. Remove SPAM from batter with a fork and let the excess batter drip off of the SPAM pieces. Place SPAM into skillet and cook until golden brown and batter is cooked through, turning once. Repeat with additional SPAM and pancake batter. To serve, insert popsicle sticks into the SPAM and serve with honey, maple syrup or applesauce, for dipping. Makes 18. Test Kitchen Tip: Use any excess pancake batter to make small pancakes to serve alongside Sunnydogs.

For me spam is that guilty pleasure. The one I only confess to liking in the anonymity of the internet. It's appearance is not one that makes my mouth water but slice it up, fry it and serve it with eggs and I am a happy camper!

In fact Spam is the brand name, the caviar of the mystery meats. Too expensive for my family we grew up on Treat. A very similar product but not as fun to say.

I feel bad for Spam and it's bad rap but I must admit that if you were to ask me this same question on the street I would look appalled and shudder while trying to run away all the while denying that there is even a can in my pantry.

Then I would probably rush home and cut some up and enjoy it with my eggs, toast and left over coffee from that morning!

I have come out of the Spam closet because I know that I will never be found out! lol!

Island Teriyaki Bites

Ingredients

1 (12-ounce) can of SPAM® Lite, diced
1 Tbsp sesame oil
2 cups Hawaiian Style Teriyaki Sauce and Marinade, divided
1 (8-ounce) can crushed pineapple, drained well
3 Tbsp chopped green onions
¼ cup finely shredded carrots
½ tsp fresh grated gingerroot
32 Phyllo dough sheets
Butter flavored nonstick cooking spray
2 Tbsp jalapeno jelly, melted

Cooking Directions

Marinate diced SPAM® in 1 cup of the teriyaki sauce for 30 minutes. Drain SPAM® and sauté in sesame oil for 3-4 minutes or until lightly browned. Add the pineapple, green onions, carrots and ginger to the SPAM®. Lay one sheet of phyllo dough onto a clean work surface.* Lightly spray phyllo sheet with nonstick cooking spray. Top with a second sheet of phyllo dough and lightly spray with nonstick spray. Cut each sheet into three 2-inch wide strips. Place about a tablespoon of the SPAM™ mixture on one end of each strip. Fold dough diagonally, up and over the filling until a triangle-shape is formed. Lightly spray the triangle with nonstick spray. Repeat with remaining phyllo sheets and SPAM®. Place triangles on a lightly sprayed baking pan. Bake at 350°F for 20 minutes or until golden brown. Lightly brush each triangle with jalapeño jelly. Serve with remaining teriyaki sauce for dipping. Makes 4 dozen.

* Mini phyllo shell version: If desired, you may fill 3 (2.1-ounce) packages mini phyllo shells with the SPAM™ mixture. Place on baking sheet. Bake at 350°F for 8 minutes or until hot. Top with jalapeño jelly and serve. Makes 45 mini shells.

The food of EVIL. Years ago I can truly say that the SPAM BURGER has been out. My Uncle used to fry it, broil it, barbecue it, grill it, put it on Ritz crackers and the list goes on. Have you seen the cooking channel? He could have been on there to show the many different ways to serve SPAM.

Hawaii is the biggest consumer of SPAM per capita because they used it for the troops in WW II. We call it Portugese Steak. We even have a SPAMFEST & close the streets off & 50,000 people come out, W/multiple stages & live bands. (us locals look for any excuse for a party or Parade to shut the streets down & get down & have fun.)

I LOVE spam......make a Spam sandwich.......Plenty of Helmanns Mayo, black pepper, Fresh loaf of bread (Bunny Bread Plantation Style if available), room temperature Spam sliced 1/4" thick, cover Spam with red onion sliced 1/8" thick.......necter of the Gods!

I choose to think of it as a "mystery meat", and that much of Spam's allure is in the mystery itself--of course, I could be wrong.....

Good grief, do they still make that stuff? I remember liking it although it was pretty salty. Pickled pig feet are really the classic canned meat product.
